Pig Intestine Soup: A Traditional Chinese Dish for New Year's Eve Dinner

【Ingredients】

Fresh pig intestines (750g), dried peas (75g), Sichuan peppercorns (5g), ginger (5g), green onions (10g), salt (10g), monosodium glutamate (2g), pepper powder (2g), rice vinegar (20g), alum (1g).

【Instructions】

1. Cut off the end of the pig intestine and rub it with salt inside and outside to remove impurities. Then wash it thoroughly with clean water. Add ground alum and rice vinegar, rub it again, and rinse it clean. Boil it in boiling water for about 15 minutes and remove it. Soak the dried peas in warm water for 12 hours, rinse them once after they are soaked and swollen, and drain the water. Cut the green onions into small pieces and mince the ginger.

2. Put the boiled pig intestine back into the boiling water pot, add green onions, ginger, Sichuan peppercorns, and pepper powder, bring to a boil over high heat, and then simmer over low heat until it is 70% cooked. Remove the pig intestines and cut them into segments about 1.2 cm long. Put them back into the pot with the peas and continue to simmer until they are cooked and the soup turns white and the peas crack. Add monosodium glutamate, sprinkle with green onions, and serve in soup bowls.

【Cleaning of Pig Intestines】

1. Salt and flour (or starch): After rinsing the pig intestines with clean water to remove mucus, sprinkle salt and flour inside and outside the intestines, rub them repeatedly, rinse with clean water, and then boil them in boiling water. Remove and scrape off dirt.

2. Cooking wine: Put the intestines that have been treated in a container, pour in cooking wine, rub them inside and outside repeatedly, and then rinse with clean water.

3. Rice water: Put the processed intestines in rice water for further cleaning to remove any remaining odor.
