What is red meat?

Red meat is a nutritional term that refers to meat that appears to be red before cooking. Red meat is characterized by coarse and hard muscle fibers, higher fat content, especially saturated fatty acid content than white meat. Pork has the highest fat content, followed by lamb, and beef the lowest. Even in lean meat, there is still a considerable amount of fat, for example, 6.2% in pork, 3.9% in lamb and 2.3% in beef. Red meat is generally red in color, and its color comes from the myoglobin contained in mammalian meat. Myoglobin is a protein that transports oxygen to the animal's muscles. The color of the food after cooking well cannot be used as a criterion to determine whether it is red meat. For example, cooked shrimp and crab are red in color, but cannot be considered red meat. And pork turns white when cooked, but pork still belongs to red meat.

How much red meat to eat per day

The dietary guidelines for Chinese residents recommend that we eat 75g - 100g/day of white meat and 50g - 75g/day of red meat. The main reason why you should eat less red meat per day than white meat is that the fat content of red meat is higher than white meat, and the biggest advantage of red meat is that it is very rich in iron.

What are the benefits of eating red meat

Red meat is rich in iron, and vegetarians and people who do not go into red meat should eat more iron-rich foods. Red meat is also rich in protein, zinc, niacin, vitamin B12, thiamine, riboflavin and phosphorus, etc. The vitamins in red meat promote human growth and development and also do not raise one's cholesterol.

The disadvantages of eating too much red meat

Red meat is high in saturated fat, and high intake of saturated fatty acids is the strongest factor that causes elevated blood cholesterol and LDL. Epidemiological studies have also found that people who eat red meat have an increased risk of colon cancer, breast cancer and other diseases. Recent studies in the United States have shown that men who eat too much red meat are also at increased risk of various diseases of the prostate.
