Shouxi Healthy Spring Meal

【Ingredients】

8 ounces of sliced beef for hot pot, 1 box of tofu, 1 handful of kudzu noodles, 3 ounces of burdock, 1 lettuce, 2 ounces of red carrot, 1 onion, 3 ounces of Korean cabbage seedlings, white sesame seeds as needed

【Seasonings】

5 tablespoons of Shouxi sauce, 1/2 tablespoon of wine, 1 tablespoon of sesame oil, a pinch of salt, soy sauce with dried bonito as needed


【Instructions】

1. Scrape off the outer skin of the burdock with the back of a knife and cut it into shreds. Soak it in salt water. Slice the red carrot and then cut it into shreds. Cut the lettuce into chunks. Slice the onion into shreds. Cut the tofu into cubes and set aside.

2. Boil a pot of water, add the kudzu noodles and turn off the heat. Let it soak until cooked and set aside.

3. Heat a dry pan, stir-fry the white sesame seeds until fragrant, then pour in the sesame oil. Stir-fry the onion until fragrant, then add the beef slices and stir-fry until the beef changes color. Remove the beef first.

4. Next, arrange the Korean cabbage seedlings, lettuce, red carrot, burdock, tofu, and stir-fried beef in the pan. Pour in the wine, Shouxi sauce, and soy sauce with dried bonito. Bring to a boil, then add the kudzu noodles and cook until the soup thickens slightly.

【Tips】

1. The nutrition and deliciousness of burdock are most abundant between the skin and the flesh, so do not peel it. Just gently scrape off the brown skin with the back of a knife or a rough tool.

2. Soaking the burdock in salt water can prevent discoloration. It can also be soaked in vinegar water or lemon water.

3. Lettuce can help improve obesity and fatty liver.

4. Kudzu noodles have the function of relieving stress and muscle stiffness.
