  The standard definition of Baijiu is: a distilled liquor made primarily from grains, with daqu, xiaoqu, or fuqu, as well as koji and yeast, as saccharification and fermentation agents, and produced through steaming, saccharification, fermentation, and distillation. It is also known as shaojiu, laobaigan, shaodaizi, etc. It is colorless (or slightly yellow) and transparent, with a fragrant and pure aroma, a sweet and clean taste, and a high alcohol content. After aging, it develops a complex aroma mainly composed of esters. Various types of Baijiu are made using koji and yeast as saccharification and fermentation agents, utilizing starch (sugar) as raw material, and produced through steaming, saccharification, fermentation, distillation, aging, and blending.

 

  Strictly speaking, Baijiu made by blending edible alcohol and edible spices cannot be considered as Baijiu, but rather alcoholic beverages containing alcohol. The main production areas of Baijiu are the Renhuai area in Guizhou Province, the Yibin and Luzhou areas in Sichuan Province, and the Fenyang area in Shanxi Province, which have the largest and highest-quality distilling liquor production areas in the world. The Baijiu industry cluster in these areas plays a significant role in the Chinese Baijiu industry.


 

  Baijiu is a type of distilled liquor unique to China. It is one of the six major distilled liquors in the world (Brandy, Whisky, Vodka, Gin, Rum, and Chinese Baijiu), made from starch or sugar raw materials through fermentation and distillation. Baijiu, also known as shaojiu and baigan, is a traditional Chinese alcoholic beverage. According to the "Compendium of Materia Medica," it states, "Shaojiu is not an ancient method, it was invented in the Yuan Dynasty. Its method involves using concentrated liquor and lees in a steamer to steam and let the vapor rise, then collecting the dewdrops with a receptacle." It can be concluded that the production of Baijiu in our country has a long history.

 

  Baijiu is a type of distilled liquor unique to China. High-quality Baijiu must have an appropriate aging period. Lu-style Baijiu requires a storage period of at least 3 to 6 months, often over a year; Fen-style Baijiu has a storage period of about one year, and Maotai-style Baijiu requires a storage period of over three years. The alcohol content is generally above 40 degrees, and below 40 degrees is considered low-alcohol liquor.

 

  Baijiu aids digestion and promotes sleep:

      Baijiu can be classified into: tonifying and invigorating liquor, heat-clearing and detoxifying liquor, fever-clearing and detoxifying liquor, qi-regulating and blood-activating liquor, gynecological disorder liquor, etc. The alcohol content of medicinal liquor is determined by the liquor used to steep the medicinal materials. The consumption of ginseng Baijiu can be based on high-alcohol liquor, and the consumption of wolfberry Baijiu can be based on low-alcohol liquor.


 

  
      Baijiu can relieve menstrual pain:


       It has been proven that one-third of the calories in Baijiu compensate for the liver's digestive energy, while two-thirds of the calories participate in the metabolism of nutrients such as proteins and carbohydrates outside the liver. 70% of the chemical energy of ethanol can be utilized by the human body, and 1 gram of ethanol provides 5 kilocalories of heat energy. Drinking an appropriate amount of Baijiu can stimulate the circulatory system. People with insomnia can drink a small amount of Baijiu before sleep, which is beneficial for sleep and can stimulate the secretion of gastric juice and saliva, promoting digestion. Baijiu has the functions of ventilation, dispelling cold, relaxing tendons, and activating blood circulation. For example, safflower liquor is used to treat blood stasis-type dysmenorrhea, turtle meat liquor is used to treat long-term cough, snake blood liquor is used to nourish qi and blood, and orange liquor and peach kernel liquor are used to treat kidney deficiency and lower back pain, etc.

       The components in Baijiu are very complex, and Maotai liquor alone contains over 70 types of aromatic substances. Many of these substances are essential for human health. Drinking a small amount of Baijiu before sleep can promote sleep and stimulate the secretion of gastric juice and saliva, promoting digestion. In addition, moderate consumption of Baijiu also has the functions of ventilation, dispelling cold, relaxing tendons, and activating blood circulation. However, due to the high alcohol content of Baijiu, it is important not to drink excessively, as it can easily lead to alcohol poisoning and damage to the liver and brain cells. Drinking large amounts of alcohol during pregnancy can also harm the health of the fetus.
