Ingredients
1 pig stomach, 150g soaked monkey head mushrooms, 40g lotus seeds, 1 piece of ginger, 1 tablespoon of cooking wine, salt to taste, pepper to taste.
Instructions
1. Soak the lotus seeds in advance. If they have cores, use a toothpick to remove the cores, otherwise the soup will taste bitter. The cores of lotus seeds have a cooling effect, and this soup is a warming and nourishing stomach soup, so the cores should not be included. I used pre-washed and pre-soaked monkey head mushrooms, which is more convenient.
2. Start by washing the pig stomach. The pig stomach you just bought is covered with mucus. Rinse off the impurities on both sides with running water, then rub it with a little white vinegar and rinse it off. Add some flour and continue to scrub. Rinse it clean. After two rounds, the pig stomach will be clean and refreshing.
3. Boil a pot of hot water and place a plate inside the pig stomach. Hold the pig stomach up. Blanch for about 3 minutes. The plate is used to prevent the pig stomach from shrinking significantly during blanching.
4. After blanching, use a knife to scrape off the old skin, calluses, and fat on both sides of the pig stomach. Continue to rinse with warm water. This will prevent the soup from being greasy.
5. Stuff the monkey head mushrooms into the pig stomach. Put it into a stew pot and add enough hot water. Add a small piece of ginger. Bring to a boil over high heat and simmer slowly over low heat for about 2 hours in total.
6. This is when it has been stewed for about 1 and a half hours, and the soup has turned white.
7. Take out the pig stomach and cut it into strips with a knife or kitchen scissors. Put it back into the stew pot and continue to stew.
8. At the same time, pour the cleaned lotus seeds into the pot. Continue to simmer for about half an hour. Then add salt to taste and, if you like, some pepper. This soup is very delicious and does not need to be added with chicken essence.
