The Importance of Properly Rinsing Rice: A Neglected Step with Nutritional Consequences

Don't underestimate the process of rinsing rice, as the method and quality of rinsing rice directly affect the absorption of nutrients from rice by the human body.

If rice is not rinsed properly, the surface nutrients of the rice grains will easily be lost with the rinsing water. Most of the vitamins and minerals in rice are located in the outer layer of the rice grains and are easily soluble in water. Studies have shown that when rice is rinsed 2-3 times, vitamins can be lost by 40%, minerals by 15%, and protein by 10%. If you rub the rice vigorously, the loss of nutrients will be even greater. Therefore, the more times rice is rinsed, the more vitamins and minerals will be lost from the rice grains.

The correct method of rinsing rice is: use cold water to rinse the rice, not hot water or running water; control the number of rinses appropriately, just remove the sand and impurities; do not rub the rice vigorously while rinsing; also, before rinsing rice, do not soak the rice in water to prevent the loss of soluble nutrients on the surface of the rice grains. However, if the rice is moldy, pick out the moldy rice and discard it.

Don't directly pour out the water used for rinsing rice, as it has many unexpected uses. For example, using the water to irrigate flowers or vegetables can make them grow stronger; using the water to wash pig's stomach is more efficient and convenient than using salt or alum, and it is clean and economical; putting fish or meat with a strong odor into salted rice water for washing can eliminate the odor.
