Sour Celery

● Ingredients

1. 3g of Cassia Seed, 2g of Eucommia Bark

2. 3 stalks of American celery, 200g of konjac, 2 pieces of jellyfish

3. 5 cloves of garlic, 3 slices of ginger, 1 tablespoon of olive oil

4. 1 tablespoon of white vinegar, 1 tablespoon of soy sauce, 1 tablespoon of oyster sauce, 1 teaspoon of white sugar, 2 teaspoons of sesame oil

● Instructions

1. Soak the jellyfish in water for 2-3 hours, rub it thoroughly and rinse with water to remove salt. Cut the celery and konjac into small pieces. Boil water and blanch the celery and konjac until cooked. After turning off the heat, add the jellyfish and mix with olive oil. Place it on a plate and let it cool in the refrigerator.

2. Sauce preparation: Boil 1 cup of water with the Cassia Seed and Eucommia Bark until it reduces to 1/3 cup. Then add the ingredients from step 4, garlic, and ginger (finely chopped) and mix well. When serving, pour the sauce over the celery.

Bean Curd Skin with Sprouts

● Ingredients

1. 3g of Poria Cocos, 5g of Coix Seed

2. 3 large pieces of bean curd skin, about 360g of mung bean sprouts

3. 1 teaspoon of sesame paste, 1 tablespoon of bonito soy sauce, 1 teaspoon of white sugar, 1/2 teaspoon of salt, 1 teaspoon of white vinegar, 1 teaspoon of sesame oil, 1 teaspoon of white sesame seeds

● Instructions

1. Boil the Poria Cocos and Coix Seed with 1 bowl of water until it reduces to 1/2 bowl. Strain and keep the herbal juice hot. Add sesame paste to the hot herbal juice and mix well. Once melted, add bonito soy sauce, sugar, salt, white vinegar, and sesame oil to make the sauce.

2. Boil a pot of water (about 10 cups), add mung bean sprouts and 1 teaspoon of salt, blanch for about 10 seconds, then immediately cool them with cold water and press out the excess water with your hands. Divide into 3 portions and set aside.

3. Take 3 large pieces of bean curd skin, wrap them with mung bean sprouts, and seal the edges with batter to prevent them from coming apart. Deep-fry the wrapped bean curd skin until crispy, then cut into sections and place on a plate. Pour the sauce over it and sprinkle with white sesame seeds.
