Eat stir-fried vegetables while they are hot

Some people like to save time by stir-frying vegetables in advance and then keeping them warm in the pan until everyone is ready to eat or until the next meal. However, the process of keeping the stir-fried vegetables warm in the pan causes a 25% loss of vitamin B1. If stir-fried cabbage is kept warm for 30 minutes, it will lose 10% of its nutrients, and if kept for 1 hour, it will lose 20%.
