Tender crabs with bitter crab yolk can be eaten

Bitter crab yolk shows the color, is relatively thin, the crab yolk is not lumpy, and the amount of crab yolk is not much, mainly because the crab is too tender and not yet fully developed. This kind of crab yolk is edible, but the taste of bitterness is not good.

Dirty crab crab yolk bitter can not be eaten

The crab yolk is fuller, but the color is slightly lighter than normal crab yolk, because the composition of the crab yolk consists of egg cells, crab digestive tissue, gonadal tissue, so it is possible that the crab is not "raised clean" resulting in the bitter taste, there are dirty things left in the crab yolk, this crab yolk is not suitable to eat.

How to prepare the crab

Inadequate preparation of the crab can also lead to bitter crab yolk. Preparation before cooking hairy crabs should be adequate. Before you buy the crab and put it in the pot, make sure to keep it in clean water for two days. After two days, the crab is basically "clean". The crab will be clean, the dirty things in the belly are drained, the crab will not be bitter.

How to choose a crab with good crab meat

Look at the color

The first is that the crab shell should be green, the crab belly should be white, not black; the second is that the crab tail should be red or yellow and high up (the crab shell part should be separated from the root of the crab umbilicus and have a full feeling), which proves that the crab yolk (cream) is very full.

Pinch the hard and soft

If you squeeze the leg of the crab, if it feels soft, it means the crab is very empty and has little meat, and the crab paste and crab yolk are not likely to be full. If the legs are hard, it means that the crab is a "strong" crab, and if you combine the above 3 points, you will be able to pick a good crab with full yellow and cream.

Can you eat more crab meat?

The cholesterol content of one hairy crab exceeds the recommended daily intake, so it is recommended that you eat no more than one crab at a time, up to two to three times a week; if you eat two to three crabs at a time, the next time you eat crab must be a week apart.

How to make crab roe tasty

Crab Roe and Bean Curd Casserole

Ingredients.

1 egg, 2 green onions, half a bowl of fresh crab yolk, 1/3~1/2 carrots, 6~7 shrimps, salad oil to taste, 1 bowl of water, 1/3 bowl of tahini water, 1 box of egg and tofu, 3-4 small slices of ginger, half a bowl of rice wine, 1 tsp of oyster sauce, sesame oil to taste.

Directions

1. Preparation: Wash and cut the green onion, cut the ginger into three to four slices and set aside.

2. Ingredients: Wash and cut egg and tofu into small pieces and set aside. 1/2 teaspoon of cornstarch with water to make thin gravy.

3. Ingredients: Peel 1/2 carrot into puree, soak shrimps and cut into small pieces (preferably finely chopped)

4. Preparation: Separate the egg white and yolk, put the egg white into a bowl, take the yolk and steam it, then chop it up and set aside (this part I have a very rich crab yolk, so I did not use salted eggs but ordinary eggs, with salted eggs taste more rich and even without crab yolk can create a rustling texture)

5. Add a little oil and turn on low heat, gently pour the eggs and tofu into the pan and fry for six or seven minutes until the surface is golden brown, then remove and set aside (you can also fry like outside restaurants until the skin becomes coffee-colored)

6. re-start the pan, add some sesame oil, pour 1/4 bowl of green onions and ginger slices burnt, to be fried aroma after the ginger slices and green onions removed only leave the oil part to add a little more oil, set into the carrot puree stir-fry and then add shrimp minced stir-fry until the oil is slightly orange, shrimp stir-fry

7. Add the crab yolk and egg yolk and the shrimp and carrot stir-fry together until evenly colored, then add a bowl of water with half a bowl of rice wine and a spoonful of oyster sauce and cook until the water is boiling, add the tofu, sprinkle with the previously prepared tahini water, thicken the gravy, then cover the pot and smother for five minutes.

8. Pour in the previously prepared egg whites, smother for another minute or two, then remove from the pan, sprinkle with green onions and serve.

Snowy Mountain Crab

Ingredients: 150g of crab meat, 450g of pure milk, 200g of egg white, 100g of Japanese tofu, 50g of shrimp paste, 15 vegetable guts, crab yolk, cornstarch, salt, MSG, stock, crab oil and oil.

Method

1, egg whites, pure milk, crab meat, stir well, add salt, MSG, raw flour code taste sizing, stir-fried in a hot pan with cold oil over low heat into the filling, plate.

General Crab Meat Bun

Ingredients: 250g of red yeast dough, 120g of filling, 70g of fried crab yolk, 50g of jelly.

Directions

1. Mix the basic stranded meat filling with the crushed jelly in the machine, put it in the refrigerator and set aside.

2. Roll the red yeast dough into long round strips, then cut into eight equal portions, then press the cut side to flatten the dough and use a stick to make a slightly thicker crust in the middle with a diameter of about 9 cm.

3. Take the crust from Method 2, wrap it with the appropriate amount of filling ingredients from Method 1, and fill it with the appropriate amount of fried crabapple. Place the buns on the steamer sheet and let them rest for about 20-30 minutes.

4. Place the buns from method 3 in a steamer basket and steam for about 8-10 minutes on high heat, then remove from heat and simmer for about 2 minutes.
