Potatoes cause food poisoning mainly because green or sprouted potatoes contain a large amount of lobotoxin, which is a biological toxin produced by potatoes to protect young shoots, and a small amount of this toxin is not toxic to humans, and most of the toxin will be decomposed after sufficient heating. But sprouted potatoes have a lot of lobotoxin, and if you eat more than 200mg of the toxin, you will be poisoned.

How to deal with sprouted potatoes can be eaten

Remove the sprouted part when peeling

If the potatoes do not have many sprouts or the green parts are not very big, you can dig out the sprouts and green parts when peeling. Consume the other parts to reduce the amount of lobotropin in the edible part.

Thinly sliced or shredded in water before cooking

Sprouted potatoes can be de-budded, peeled and dug off the sprouted parts and then cut into thin slices or shreds, soaked in water for 1~2 hours and then fried into dishes, it is better to add a certain amount of vinegar to the soaking water to promote the decomposition or dilution of lobotropin and reduce the content of edible part lobotropin, and also make the potatoes eat water and become tender, crisp and taste better.

Add vinegar when cooking
