Not easily digested and absorbed

Raw eggs contain antitrypsin, which inhibits the breakdown and absorption of proteins in the digestive juices of the gastrointestinal tract. At the same time, raw eggs are liquid and have a short residence time in the gastrointestinal tract, so they are not easily digested and absorbed. When eggs are cooked, the original antitrypsin is destroyed and the structure of the egg is changed so that 95% of the protein can be digested and absorbed by the body.

Increases the burden on the liver

When people consume raw eggs, a large amount of undigested protein is decomposed by E. coli bacteria in the large intestine and becomes corrupted, producing more toxic substances such as amines, phenols, ammonia, hydrogen sulfide, etc. These toxic substances are absorbed by the intestine and enter the liver through the portal vein, increasing the metabolic burden of the liver.

Increase the rate of Toxoplasma gondii infection

Studies have confirmed that Toxoplasma gondii may be present in chicken ovaries, and eggs also have the potential to be infected with Toxoplasma gondii.
