Ingredients: 350g ribs, 1/4 cabbage, 1 piece of northern tofu, 50g vermicelli, 3 slices of ginger, 2 teaspoons of salt. Directions. 1. Rinse the ribs and blanch them in boiling water for a minute or two to remove the blood. 2. Cut cabbage into large slices and set aside; cut tofu into matchbox-sized pieces; soften vermicelli in cold water. 3. Put the ribs into a casserole dish, connect a sufficient amount of water (about 1 kg) over the ribs, boil over medium heat, and then make sure to keep boiling for 20 minutes, so that the soup color will be creamy. After the soup becomes white, and then turn to low heat slow stew for about 45 ~ 60 minutes. 4. Add salt to taste, pour in the tofu and continue to stew on low heat for about 15 minutes. 5. Add the cabbage and vermicelli to the pot, and simmer for about 5-8 minutes before turning off the heat. 1.
