Cut off the roots and wash them

The roots of shiitake mushrooms are the most difficult to clean, there is a lot of sediment in the short roots, if you don't cut them off and clean them, the mushroom caps will secrete mucus and absorb a lot of sediment, so it is not easy to clean them, gently rotate the caps in the same direction, the sediment will fall off with the folds of the caps, repeat several times, the sediment will fall off.

Wash mushrooms with salt water

When cleaning shiitake mushrooms, put an appropriate amount of salt into the water and stir it to dissolve, put the mushrooms into the salt water and soak for a little while, the sand will sink into the bottom of the basin, so that the mud and sand on the surface of the mushrooms can be easily cleaned with water.

Washing mushrooms with sugar water

Soak mushrooms in sugar water for about 10 minutes, and when the sugar water is fully dissolved, gently scrub the mushrooms with your hands and rotate them a few times with chopsticks, and then rinse them with clean water to wash away the mud and sand on the surface.

Wash shiitake mushrooms with rice broth water

Don't pour out the rice broth water after washing rice, soak the mushrooms in it for a while, then stir the mushrooms in one direction and wash them with water after the sediment falls off, the sediment will be cleaned.

Precautions for cleaning shiitake mushrooms

Avoid over-washing shiitake mushrooms with water. Over-soaking and cleaning shiitake mushrooms with water before eating will cause loss of nutrition. Although washing shiitake mushrooms with sugar water can save a lot of trouble, it will accelerate the dissolution of water-soluble ingredients such as polysaccharides and high-quality amino acids in large quantities in water, reducing the nutritional value of shiitake mushrooms. Therefore, it is better not to wash them with sugar water if you can. When washing shiitake mushrooms, do not use your hands to grab them, as this will destroy the fibrous material of shiitake mushrooms, and you should not spin and stir them in the opposite direction, so that the sand grains will not only not fall off, but will be rolled into the folds of the mushroom cap, making it more difficult to clean.
