Dietary Recipes for Healing Elderly Digestive Ulcers

Digestive ulcers in the elderly are often related to smoking and diet. Patients often present with complications such as bleeding and perforation. Recipe 1: Cardamom Steamed Buns

Ingredients: 30g cardamom, 1000g flour, 50g yeast

Method: Grind the cardamom into fine powder. Mix the flour and yeast with warm water to form a dough. Cover and let it rise for about 2 hours. After the dough has risen, add a suitable amount of alkaline, sprinkle the cardamom powder, knead well, and shape it into buns. Steam the buns in a steamer over high heat for about 15 minutes until cooked.

Recipe 2: Saussurea Stewed Pig Stomach

Ingredients: 10g saussurea, 1000g pig stomach, seasoning

Method: Wash the pig stomach and blanch it in boiling water, then remove the membrane. Add bone broth, scallions, ginger, and peppercorns to a pot. Add the pig stomach and simmer until cooked. Skim off the blood foam. Remove the pig stomach, let it cool, and slice it. Boil 500ml of the original soup, add pig stomach slices, saussurea powder, pepper powder, lard, and monosodium glutamate in appropriate amounts. Bring to a boil, thicken with wet starch, and serve.

Recipe 3: Kumquat Root Stewed Pig Stomach

Ingredients: 30g kumquat root, 100-150g pig stomach

Method: Wash the pig stomach and cut it into small pieces. Stew the pig stomach and kumquat root together in 4 bowls of water until it reduces to 1.5 bowls. Season with a little salt.

Effect: Invigorating the spleen, appetizing, promoting qi circulation, and relieving pain.

Indications: Suitable for elderly patients with gastric ulcers, duodenal ulcers, and chronic gastritis caused by stagnation of spleen and stomach qi, with symptoms of distension and pain.


Recipe 4: Ginger Stewed Chicken

Ingredients: 1 chicken, 6g ginger, 6g clove, 3g dried tangerine peel, 3g pepper, scallion, soy sauce, salt, vinegar

Method: After killing the chicken, remove the feathers and internal organs, wash and cut into pieces. Put the chicken pieces into a pot, add ginger, clove, dried tangerine peel, pepper, scallion, soy sauce, salt, vinegar, and enough water. Bring to a boil over high heat, then simmer over low heat until the chicken is tender.

Effect: Tonifying the spleen and qi, dispelling cold, and warming the middle.

Indications: Suitable for elderly patients with gastric ulcers, mild and intermittent stomach pain, relief of pain after eating, preference for pressing on the stomach, vomiting clear water, thin stools, pale complexion, and fatigue.


Recipe 5: Six-Flavor Beef Jerky

Ingredients: 15g pepper, 15g tuckahoe, 6g dried tangerine peel, 6g clove, 6g saussurea, 2500g beef, 100g ginger, 50g scallion, 75g salt

Method: Remove the tendons and fascia from the beef, wash it, and blanch it in boiling water until the color changes. Take it out and let it cool, then cut it into large pieces. Grind the pepper, tuckahoe, dried tangerine peel, clove, and saussurea into powder. Mix the ginger and scallion juice with the powdered spices, add salt to make a paste. Mix the beef pieces with the spice paste and put them in a jar. Seal the jar and marinate for 2 days. After that, remove the beef and cook it in the oven until it becomes jerky.

Effect: Warming the middle, tonifying qi, and nourishing the blood.

Indications: Suitable for elderly patients with gastric ulcers, mild stomach pain, preference for warmth and pressure, cold limbs, loose stools, vomiting clear water, and fatigue.


Recipe 6: Congee with Cabbage Shreds

Ingredients: 50g cabbage, 100g rice, salt, monosodium glutamate, sesame oil

Method: Shred the cabbage. Wash the rice and put it in a pot with water. Cook the rice until it becomes congee. After the congee is cooked, add the cabbage shreds and blanch them. Season with salt, monosodium glutamate, and sesame oil.

Effect: Calming the mind, relieving restlessness, tonifying the spleen, and nourishing the stomach.
