Cooking with Lotus Seeds: Delicious and Nutritious Recipes

Lotus seeds have high nutritional value and can be both eaten and used as medicine. They are often paired with other ingredients such as fox nut, white atractylodes, lily bulb, and Chinese yam to have the effects of nourishing the kidney, strengthening the essence, nourishing the heart, and calming the mind. What can be cooked with lotus seeds?

Lotus Seed and Chinese Yam Porridge

Ingredients

50g lotus seeds, 30g Chinese yam, 50g glutinous rice, 30g barley. 30g white sugar.

Instructions

1. Wash the lotus seeds, Chinese yam, glutinous rice, and barley, and soak them until fully moistened. Remove the core of the lotus seeds.

2. Take a clay pot and put in the lotus seeds, Chinese yam, glutinous rice, and barley. Cook for 1.5 hours.

3. Add white sugar and cook for a while.

Effects: Nourishes the heart, calms the mind, strengthens the spleen, and benefits the stomach.

Gourd, Lotus Seed, and Old Duck Soup

Ingredients

200g gourd, 300g old duck, 20g lotus seeds, 50g Chinese yam, appropriate amount of tangerine peel.

Instructions

1. Wash the old duck, remove the internal organs, and cut into pieces. Blanch in boiling water.

2. Peel and cut the gourd and Chinese yam into pieces.

3. Put the duck meat, gourd, Chinese yam, lotus seeds, and ginger into a pot.

Boil with high heat, then add tangerine peel. Simmer for 3 hours with medium heat. Add salt for seasoning.

Effects: Strengthens the spleen, stops diarrhea, and replenishes deficiency.

Lotus Seed and Lily Bulb Porridge

Ingredients

150g rice, 25g dried lily bulb, 25g lotus seeds, 2 wolfberries, 30g rock sugar.

Instructions

1. Grind the dried lily bulb into powder with the back of a knife. Soak the lotus seeds in hot water until soft.

2. Soak the wolfberries in hot water for a while. Wash the rice.

3. Put water into a pot and bring it to a boil. Add rice and dried lily bulb.

4. Add lotus seeds and simmer with medium heat until cooked. Finally, add rock sugar.

Effects: Nourishes yin, moistens the lungs, clears heat, and calms the mind.

Lotus Seed and Fox Nut Porridge

Ingredients

100g lotus seeds (core removed), 100g fox nut, 50g fresh lotus leaf, 50g glutinous rice.

Instructions

1. Wash the glutinous rice and fox nut, and soak them in cold water for 2-3 hours. Remove and drain.

2. Wash the lotus seeds and soak them in cold water until soft, then remove the core.

3. Add about 2000ml of cold water to a pot, and add the lotus seeds, fox nut, and glutinous rice. Bring to a boil over high heat.

4. Then simmer over low heat to make porridge. Add rock sugar for taste, and simmer for a while before serving.

Lotus Seed and Licorice Tea

Ingredients

2g lotus seed, 3g licorice.

Instructions

Put the lotus seed and licorice in a teapot, pour boiling water, cover and let it steep for 10-15 minutes before drinking.

Effects: Clears heart fire, relieves constipation, and relieves irritability.

Lotus Seed and Bamboo Leaf Tea

Ingredients

2g lotus seed, 3g bamboo leaf.

Instructions

Put the lotus seed and bamboo leaf in a teapot, pour boiling water, cover and let it steep for 10-15 minutes before drinking.

Effects: Clears and purges heart fire, relieves irritability, and nourishes the spirit.

Red Date and Lotus Seed Porridge

Ingredients

About 80g red dates, 50g lotus seeds, 200g glutinous rice.

Instructions

1. Wash the red dates and remove the pits. Wash the lotus seeds and glutinous rice.

2. Put all the above ingredients into a clay pot, add an appropriate amount of water, and bring to a boil over high heat.

3. Then simmer over low heat until it becomes porridge. Add a little salt for seasoning.
