Beat the Heat with Amaranth: A Nutritious and Cooling Vegetable

July is coming to an end, and people are suffering from the heat and trying various methods to cool down. So, I would like to recommend a vegetable called "Amaranth" which is most suitable for this season. Here are the details:


  Amaranth

Amaranth is known as the "longevity vegetable" in folk culture, indicating its high nutritional value. There are two types of amaranth, purple and green. Personally, I think the green one has a better taste, but it seems that the purple amaranth has higher nutritional value. Amaranth has the effects of nourishing the stomach, replenishing qi, clearing heat, and improving eyesight. It is also rich in calcium, which promotes the growth of teeth and bones. Amaranth contains abundant iron and vitamin K, which can promote blood clotting and have a good therapeutic effect on treating anemia. Amaranth can also help with weight loss, detoxification, and prevention of constipation. Therefore, it is particularly suitable for children, the elderly, and women to consume.

  Amaranth Recipes

  1. Amaranth and Pork Dumplings

Ingredients: 210g pork filling, 270g amaranth, 200g medium-gluten flour, 100g water

Seasonings: 1.5 teaspoons salt, 1 tablespoon light soy sauce, 1 tablespoon dark soy sauce, 2 tablespoons cooking wine, a little ginger, 1/3 teaspoon white pepper powder, 3 tablespoons vegetable oil, a little sesame oil

Preparation method: (1) Mix 200g of medium-gluten flour with 100g of water and a little salt to form a smooth dough. Set it aside and cover it with plastic wrap. Adding salt to the dough makes it less likely to break when boiling the dumplings later.


(2) Put the pork filling in a large bowl, add 1 tablespoon of light soy sauce, 1 tablespoon of dark soy sauce, 2 tablespoons of cooking wine, a little ginger, and white pepper powder, 3 tablespoons of vegetable oil. Mix well and marinate for about 15 minutes.

(3) Remove the old parts of the amaranth's roots, soak it in lightly salted water for a few minutes, and then blanch it in boiling water for a dozen seconds. Do not cook it for too long.

(4) Take out the blanched amaranth, rinse it with cold water, squeeze out the water, and chop it into small pieces. Set aside.

(5) Start preparing the dumplings. Add the chopped amaranth to the pork filling and add 1.5 teaspoons of salt and a little sesame oil to adjust the filling.

(6) Roll the dough into a long strip, cut it into suitable-sized pieces, and then roll them into dumpling skins with a rolling pin.

(7) Take a dumpling skin, put in the filling, and fold the dumpling according to your preference.

2. Garlic Amaranth


Effects: Reducing blood pressure

Ingredients: Amaranth, garlic

Seasoning: Salt

Preparation method: (1) Remove the old roots of the red amaranth, wash and drain, and break it into sections.

(2) Crush the garlic into minced garlic.

(3) Heat the pan, pour in oil, first sauté a few pieces of minced garlic until fragrant, then add the amaranth and stir-fry over high heat.

(4) Stir-fry until the amaranth is 80% cooked and becomes soft in the pan, then add the remaining minced garlic.

(5) Stir-fry for a few more times, when the garlic aroma comes out, immediately turn off the heat, season with salt, and it's ready to serve.
