Tannins and caffeine in tea gradually dissolve at a water temperature of 70℃, but if the water temperature is too high, the tea taste becomes excessively bitter. Therefore, in order to preserve the nutrients, taste, and aroma of tea, it is best to brew tea with water temperature between 70℃ and 80℃. It is generally recommended to pour boiling water into a thermos first, and then brew the tea.
