  Methods of consuming Du Zhong

  1. Du Zhong peanut oxtail soup

  (1) Wash the oxtail, break it apart, soak it in cold water for half an hour, and then boil it in water with cooking wine and ginger slices.

  (2) Wash the peanuts and soak them for half an hour; wash the Du Zhong, dates, and wolfberries separately; slice the ginger and cut the scallions.

  (3) Fill the pot with enough water, add the clean oxtail, peanuts, Du Zhong, dates, ginger slices, and scallion segments. Boil over high heat, remove the scum, and simmer over low heat for 3-4 hours.
 


 

  (4) Add wolfberries and simmer for 10 minutes, season with salt and chopped coriander.

  2. Sheep kidney, yam, and Du Zhong soup

  Ingredients: 100g sheep kidney, 50g yam, 15g Du Zhong, 10g ginger, 1000g lamb bone soup. Seasonings: 5g salt, 3g chicken essence, 1g sugar, 1g pepper.

  (1) Remove the odor from the sheep kidney, wash it, blanch it in boiling water for 10 minutes, and then remove it. Wash the yam and Du Zhong, and slice the ginger.

  (2) Heat a clean pot, add the yam, Du Zhong, ginger slices, and lamb bone soup. Bring to a boil over high heat, then simmer over medium heat for 30 minutes. Add the sheep kidney and simmer for another 30 minutes. Season to taste and it's ready.
