What is soy sauce made of

May 5, 2023
Soy sauce is made not only by traditional brewing methods, but also by chemically prepared methods, or "chemical soy sauce" as it is called in the media. So today we're going to find out what soy sauce is made of and what's the deal with prepared soy sauce?

Soy sauce brewing ingredients

Traditionally, soy sauce was made from soybeans, wheat and salt. But nowadays, soybean meal, wheat bran or other raw materials are also used to brew soy sauce.

The brewing process of soy sauce

Soybeans, wheat and salt are heated at a high temperature, then added to the mix, and fermented to produce sugar, amino acids, lactic acid, alcohol and other molecules, which then undergo a complex chemical reaction to form the rich flavor and color of soy sauce. By separating these fermented liquids, soy sauce is obtained.

What is Prepared Soy Sauce

In modern production processes, prepared soy sauce is obtained by directly hydrolyzing soy protein to obtain peptides and amino acids, then adding sugar, refined salt, monosodium glutamate, yeast extracts, and flavoring nucleotides. Its production cycle is greatly shortened, and it can be made in about 8-10 hours.

Is formulated soy sauce harmful?

Prepared soy sauce shortens the production cycle and simulates the flavor of brewed soy sauce, so there is concern that prepared soy sauce may be harmful to your health. However, aside from the fact that the production process of prepared soy sauce is different from that of brewed soy sauce, it does not contain other harmful ingredients and can be consumed safely as long as it is a safe and qualified product.
