Autumn is the season when crabs are marketed in large quantities. Crabs have a delicious taste and tender meat, making them a favorite food for many people. However, sometimes crabs are not properly preserved resulting in dying or dead, so can you eat dead crabs?

Dead crabs cannot be eaten. Dead crabs have bacterial toxins in their bodies that will not be destroyed even after cooking, so not only dead river crabs, but also half-dead crabs are equally inedible.

Why dead crabs should not be eaten

Crabs in rivers are living in unclean environments, and crabs like to eat sludge and animal carcasses in the water. Therefore, crabs are prone to accumulate bacterial toxins in their stomachs and intestines. When the crab is alive, it is usually able to eliminate these bacterial toxins by itself, but once it is dying, the bacteria in the crab will multiply, decomposing the nutrients in the crab meat and producing harmful substances such as amines, which can cause poisoning after consumption.

What are the dangers of eating dead crabs?

Eating dead crabs can easily cause food poisoning. The onset of crab poisoning is usually 14-24 hours after eating, starting with abdominal pain, diarrhea, bloody stools, and then turning into pus and blood stools, similar to dysentery. It is also accompanied by fever, nausea, vomiting, and in severe cases, dehydration, generalized cramps, and drop in blood pressure, which can even be life-threatening. The cause of poisoning is mostly caused by Vibrio parahaemolyticus (pathogenic salinophilic bacteria).

How to prevent the spread of disease from eating crabs

Always buy fresh crabs, and cook them quickly, not for long. Clean the crab shells before cooking. Then cook them thoroughly to avoid the outside being cooked and the inside being raw. Cook with a fierce fire, steaming for at least 20 minutes after the water boils to kill the bacteria in the crab. The crab should be cooked and eaten now, but must be steamed thoroughly before eating overnight. The crab container should be scalded with boiling water, and the gills and gastrointestines should be removed when eating, and then dipped in ginger, vinegar and soy sauce.
