Yam is sweet in taste and cool and moist in nature. It has the function of nourishing deficiency and benefiting loss. Modern pharmacological research suggests that yam contains saponins, glycoproteins, etc., which have the function of inducing interferon and provide the basis for anti-aging substances. So how can we make yam delicious?
One: Millet, Yam and Beef Cubes
Ingredients: 100g millet, 100g Chinese yam, 125g beef tenderloin, 50g green and red bell peppers.
Seasoning: 5g ground black pepper, 6g salt, 2g sugar, 3g chicken powder, 3g Huadiao wine, 5g cornstarch, 3g Donggu Yipin soy sauce, 3g sesame oil, 15g salad oil, 5g each of scallion and ginger.
Method:
1. Soak the millet in cold water for 3 hours until soft. Put it in a pot with 500g of water, add 3g of salt, and simmer over low heat for 15 minutes.
2. Wash the Chinese yam, steam it in a steamer over high heat for 10 minutes until cooked, and cut it into 1cm square pieces.
3. Cut the beef tenderloin into 1cm square pieces; cut the green and red bell peppers into 0.7cm wide strips.
4. Heat the salad oil in a clean pan, stir-fry the scallions and ginger until fragrant, add the ground black pepper, stir-fry the beef cubes over high heat, add Huadiao wine and Yipin soy sauce, pour in the millet, yam, green and red bell peppers, and all the seasonings, stir-fry evenly, and thicken with cornstarch.
Characteristics: Salty, savory, and slightly spicy with a millet aroma.
Two: Yam and Jujube Meat
Main ingredients: 600g pork belly with skin, 500g iron stick yam, 30g dried red dates, 20g hawthorn berries.
Seasoning: salt, soy sauce, fermented soybean oil, osmanthus sauce, rock sugar, cooking wine, fresh broth, to taste.
Method:
1. Cut the pork belly into small pieces, blanch in boiling water, and set aside; peel the iron stick yam and cut into small pieces, set aside.
2. Put all the ingredients into a pressure cooker, bring to a boil, and continue to cook under pressure for 8 minutes. After a short cooling period, open the lid and remove the hawthorn berries.
3. Pour the cooked ingredients into a frying pan, heat over high heat for 3 minutes, and transfer to a hot casserole dish.
Characteristics: Soft and tender pork with the fragrance of hawthorn berries.
Three: Steamed Spare Ribs with Lotus Leaves
Main ingredients: 400g pork ribs, 150g fresh yam
Auxiliary ingredients: 1 dried lotus leaf, chopped green onions
Seasoning: 100g spare rib sauce, 20ml double steamed wine, salt, monosodium glutamate, soy sauce, sugar, vinegar, salad oil, to taste
Method:
1. Chop the pork ribs into thumb-sized pieces, rinse with running water and drain. Add double steamed wine, soy sauce, sugar, vinegar, salt, and monosodium glutamate to a bowl, mix well, marinate the ribs for 20 minutes, then add the spare rib sauce and mix well. Peel the yam and cut it into small cubes, blanch in boiling water, and set aside.
2. Soften the dried lotus leaf with boiling water, remove the water, cut it into a circular shape, place the yam cubes on the lotus leaf, and then place the marinated spare ribs on top. Fold the lotus leaf to cover the ingredients, steam in a steamer for 20 minutes, open the lotus leaf, sprinkle with chopped green onions, and drizzle with hot oil.
Characteristics: Tender spare ribs with the fragrance of lotus leaves.
Four: Crab Powder and Iron Stick Yam Soup
Ingredients: hairy crab, iron stick yam, broth, salt, lard, minced ginger, vinegar.
Method:
1. Remove the crab meat from the hairy crab and set aside;
2. Steam the yam until cooked, peel it, cut some into small cubes, and mash the rest into a paste;
3. Heat a little lard in a pan until melted, stir-fry the crab meat until fragrant, add broth, season, add yam paste and yam cubes, bring to a boil over high heat, add vinegar, and serve in soup bowls.
Comment: This is a new dish introduced by the hotel this year. The combination of crab powder and vegetarian ingredients highlights a refreshing taste and visual appeal.
Five: Braised Pig's Feet with Yam
Main ingredients: pig's trotters, yam
Auxiliary ingredients: ginger, onion, ginger slices, garlic slices, scallion sections, star anise, cinnamon, shan nai, fragrant leaves, white cardamom
Seasoning: cooking wine, spare rib sauce, spicy sauce, fresh broth, salt, pepper, caramel color, sugar, chicken essence, monosodium glutamate
Method:
1. Clean the pig's trotters and cut them into pieces. Blanch them in boiling water, then rinse and drain. Put them in a pot with ginger, onion, and cooking wine, stew until tender and fragrant, and set aside. Peel the yam and cut it into small cubes, blanch in boiling water, and set aside.
2. When serving, scoop a suitable amount of stewed pig's trotters into a pot, add yam cubes, carrot cubes, red dates, and goji berries, cook briefly, then add salt, monosodium glutamate, pepper, caramel color, sugar, chicken essence, and stir well. Serve in a hot casserole dish.
Six: Braised Beef Brisket with Yam
Main ingredient: beef brisket
Auxiliary ingredients: peeled yam, carrots, ginger slices, scallion sections, red dates, wolfberries
Seasoning: salt, monosodium glutamate
Method:
1. Cut the beef brisket into pieces, blanch in boiling water, rinse and drain. Put it in a pot with ginger slices, scallion sections, and simmer until tender and fragrant. Set aside. Cut the peeled yam and carrots into pieces, blanch in boiling water, and set aside.
2. When serving, scoop an appropriate amount of stewed beef brisket into a pot, add yam pieces, carrot pieces, red dates, and wolfberries, simmer briefly, then add salt and monosodium glutamate to season. Serve in a hot casserole dish.
