Ulcerative colitis is a common disease among the elderly, characterized by persistent or recurrent symptoms such as diarrhea, bloody mucus in the stool, and abdominal pain. In terms of diet therapy, the focus should be on nourishing the body and dispelling evil. It is recommended to choose foods that nourish the stomach and strengthen the spleen, and select herbs and foods that clear heat, eliminate dampness, warm the body, resolve phlegm, aid digestion, astringe, and firm the intestines according to the condition. Below are a few dietary therapy recipes for elderly patients with ulcerative colitis for your reference.
Recipe 1: Aconite Lamb
Ingredients: 1,000g of lamb (or dog meat), 30g of processed aconite, 30g of cooked rehmannia, 10g of dried tangerine peel, 30g of ginger slices, 30g of scallion sections, and appropriate seasonings.
Method: Put the processed aconite, cooked rehmannia, dried tangerine peel, and Sichuan peppercorns in a cheesecloth bag and tie it. Wash and cut the lamb into 2-3 pieces, remove blood by pounding and washing it in boiling water for 10 minutes, then rinse it in clean water. Place a few ribs at the bottom of a sandpot, add the lamb, ginger, scallions, and the herb bag, boil and skim off the foam, then simmer until the meat is tender. Remove the ginger, scallions, and herb bag, cut the lamb into strips, and put it back into the sandpot. Add pepper powder, monosodium glutamate, and chopped scallions to serve.
Effect: It warms the kidneys and assists yang, tonifies qi, and nourishes the blood. Suitable for elderly patients with spleen and kidney yang deficiency, insufficient qi and blood, frequent diarrhea at night, aversion to cold and cold limbs, distended abdomen, bloating, soreness and weakness of the waist and knees, and frequent urination.
Note: Eat the meat and drink the soup freely.
Recipe 2: Roasted Five-Spice Goose
Ingredients: 750g of fatty goose meat, 6g of dried ginger, 3g each of Chinese wolfberry and nutmeg, 2g of cinnamon, 1g of cloves, and appropriate seasonings.
Method: Wash the goose meat and cut it into pieces. Grind the dried ginger, Chinese wolfberry, nutmeg, cinnamon, and cloves into a fine powder, and spread it on the surface of the goose meat. Soak it in a mixture of soy sauce, yellow wine, white sugar, and monosodium glutamate for 2-3 hours. Roast it in the oven over low heat for about 15 minutes, flip it over and roast for another 15 minutes.
Effect: It warms and tonifies the spleen and kidneys, stops diarrhea, and astringes. Suitable for elderly patients with spleen and kidney yang deficiency, abdominal pain, intestinal rumbling, diarrhea at night, cold abdomen that prefers warmth, and preference for warm and hot foods, fatigue, and cold limbs.
Recipe 3: Crispy Lotus Root
Ingredients: 500g of lotus root, 125g of white sugar, and appropriate seasonings.
Method: Wash the lotus root, steam it until soft, remove the skin, cut it into 3 cm segments, and then cut each piece in half. Heat oil in a pan until 70% hot, fry the lotus root until golden yellow, then remove it. Leave a small amount of oil in the pan, add the fried lotus root, sugar, and water (about 100ml), simmer for 5 minutes over low heat, then switch to high heat. Add vinegar, monosodium glutamate, thicken with wet cornstarch, and sprinkle with cooked oil.
Effect: It strengthens the spleen and nourishes the stomach, nourishes the lungs and kidneys. Suitable for elderly patients with spleen deficiency chronic enteritis, poor appetite, diarrhea, lung deficiency cough, asthma, frequent urination due to kidney deficiency, can also be used as a diet for post-illness weakness and diabetes patients.
Recipe 4: Chestnut Braised Chicken
Ingredients: 500g of deboned young chicken (head, neck, and claws removed), 150g of chestnut meat, 1 egg, 30g of water starch, 5g each of scallions and ginger, 35ml of soy sauce, 750ml of clear soup, 500ml of vegetable oil (actual consumption 100ml), a small amount of caramel color, and appropriate seasonings.
Method: Chop the chicken into small pieces, mix it with beaten egg and water starch, and color it. Cut the large chestnuts in half and use the whole small ones. Fry them in oil heated to 50% until golden brown and remove them. Fry the chicken pieces in the oil until dark red, then remove them. Put the clear soup, chicken pieces, scallions, ginger, salt, cooking wine, and soy sauce into a pot, simmer until 70% cooked, then add the chestnuts and simmer until the meat is tender and the sauce is thick. Add monosodium glutamate to taste.
Effect: It warms the middle and strengthens the spleen, invigorates the kidneys and strengthens the tendons. Suitable for elderly patients with spleen and stomach deficiency and cold diarrhea, kidney qi deficiency causing weak waist and legs, and general weakness in the elderly.
Recipe 5: Lotus Seed Pig Stomach
Ingredients: 1 pig stomach, 60-90g of lotus seeds (core removed), and appropriate seasonings.
Method: Stuff the lotus seeds into the cleaned pig stomach and sew it with thread. Steam it in a bowl over boiling water until cooked, then cut it into thin strips. Mix it with lotus seeds, sesame oil, salt, scallions, ginger, garlic, etc. You can also steam the lotus seeds with a small amount of water until soft before mixing. Slice the pig stomach, boil it with water, ginger, and yellow wine, skim off the foam, then simmer until tender. Add the lotus seeds (with juice), scallions, salt, and monosodium glutamate, and serve.
Effect: It nourishes deficiency, strengthens the spleen, tonifies qi, nourishes the stomach, promotes diuresis, reduces swelling, consolidates the kidneys, and astringes essence. Suitable for middle-aged and elderly people who are thin, have poor appetite, diarrhea, edema, liver disease, kidney deficiency and seminal emission.
Note: Can be eaten alone or with a meal. Regular consumption has better effects.
