Exploring the Versatile Uses of Dandelion in Medicine and Food

Dandelion is a variety recently included in the dual-use of medicine and food by the Ministry of Health. It is commonly used in folk medicine to treat ulcers, meningitis, influenza, and liver and gallbladder diseases. Let's take a look at the different ways to consume dandelion.

1. Dandelion mixed with sea cucumber

Ingredients: 400g dandelion sprouts, 200g soaked sea cucumber, 5g salt, 2g monosodium glutamate, 10g soy sauce, 10g sugar, 20g vinegar, 5g sesame oil, 5g chili oil.

Method:

1. Wash the dandelion sprouts and blanch them in boiling water. Soak them in cold water for 2 hours, then drain and place them on a plate. Wash the soaked sea cucumber and cut it into thin strips. Blanch it in hot water and then soak it in cold water to remove excess water. Arrange it on top of the dandelion.

2. Mix salt, monosodium glutamate, soy sauce, sugar, vinegar, sesame oil, and chili oil. Pour the mixture over the sea cucumber. Mix well before serving.

Benefits: It has the effect of clearing heat, detoxifying, diuretic, and dispersing stagnation.

2. Four Sacred Dandelion Tea

Ingredients: Appropriate amount of honeysuckle, chrysanthemum, purple gloxinia, green chrysanthemum, and dandelion.

Method: Wash honeysuckle, chrysanthemum, purple gloxinia, green chrysanthemum, and dandelion. Boil them together in water, then simmer for about 15 minutes. Strain and serve in a cup.

3. Silver Flower Dandelion Porridge

Ingredients: 60g dandelion, 30g honeysuckle, 50-100g glutinous rice.

Method: First decoct the dandelion and honeysuckle, remove the residue and take the juice. Then cook the glutinous rice into a thin porridge.

Usage: Take 2-3 times a day, slightly warm. 3-5 days is one course of treatment.

Benefits: Clearing heat and detoxification.

4. Compound Dandelion Soup

Ingredients: 60g dandelion, 30g daqingye (large green leaves), 24g scutellaria, 12g moutan, 12g red peony, 6g licorice.

Usage: Decoct in water and take one dose daily, 3 times a day.

Benefits: Clear heat, detoxify, promote blood circulation, and reduce swelling.

Indications: Obstruction of throat due to heat and toxicity.

5. Dandelion Reed Root Juice

Ingredients: 150g fresh dandelion, 150g fresh reed root.

Method:

1. Wash the fresh dandelion and reed root, soak them in warm water for a while, then cut them into pieces and mash them to extract the juice.

2. If there is less filtered juice, put the dandelion and reed root residue from the filtered cloth into warm water and soak for a while.

3. Repeat the above process to make the juice, combine the two filtered juices, mix well.

Benefits: Clearing the lungs, resolving phlegm, relieving wind, treating colds and bacterial pneumonia.

6. Dandelion Red Bean Carp

Ingredients: One carp, 100g dandelion, 50g red beans, 6g dried tangerine peel, 6g apple, spring onion, ginger, salt, sugar, monosodium glutamate, pepper, chicken broth as needed.

Method:

1. Remove the scales, gills, and internal organs of the carp, and wash it. Wash the dried tangerine peel, red beans, and apple, and stuff them into the fish belly.

2. Clean the dandelion, chop it, and put the whole dandelion, including flowers and grass, into a gauze bag. Tie the bag tightly and put it in a pot with water to make a concentrated liquid.

3. Put the fish, spring onion, ginger, sugar, pepper, salt, medicine liquid, and chicken broth in a bowl.

4. Steam for about 60-80 minutes until the fish is cooked. After the fish is cooked, remove from the steamer. Blanch the green leafy vegetables in boiling water, then add them to the fish soup and season with monosodium glutamate.

Benefits: Relieves thirst, edema, jaundice, hepatitis, athlete's foot, dampness, and difficulty in urination.
