Phoenix Eye Fruit: A Versatile Ingredient for Medicinal Dishes

Phoenix eye fruit is a dual-purpose ingredient that can be used as both medicine and food. After being picked and shelled, it can be dried and consumed. It looks very similar to chestnuts, but the texture is more like egg yolk. Phoenix eye fruit can be steamed, cooked, or used to make soup. Below are several recipes for making medicinal dishes with Phoenix eye fruit.

Medicinal Dish 1: Braised Chicken with Phoenix Eye Fruit

Ingredients: 0.5 chicken, 1 kg Phoenix eye fruit, soy sauce, sugar, salt

Instructions:

1. Cook the Phoenix eye fruit in advance and peel off the skin.

2. Rinse the chicken and chop it into pieces. Add soy sauce, oyster sauce, white wine, white sugar, and cornstarch. Mix well and marinate for 15 minutes.

3. Heat the pan and add some oil. Add garlic and ginger and stir-fry until golden brown.

4. Add the chicken pieces and stir-fry until golden brown. Then add the Phoenix eye fruit and 2 cups of water. Boil over high heat, then simmer over medium heat for 20 minutes.

Medicinal Dish 2: Phoenix Eye Fruit Soup

Ingredients: 500g chicken, 150g water caltrop, 25g dried scallop, 2g tangerine peel, 3g ginger

Instructions:

1. Score the flesh of the Phoenix eye fruit with a knife and blanch in boiling water for five minutes. Remove and peel off the black skin to reveal the yellow flesh. Rinse the Phoenix eye fruit and pat dry. Mix with the seasoning.

2. Cut off the chicken feet and wash them. Boil in boiling water for ten minutes, then remove and wash. Drain off the water and stuff the Phoenix eye fruit into the chicken belly.

3. Soak the tangerine peel in water until soft. Scrape off the pith and wash. Soak the dried scallops in water for an hour.

4. Add 11 cups of water or an appropriate amount to the pot. Add the tangerine peel and bring to a boil. Add the dried scallops, ginger, and chicken. Simmer over low heat for three hours. Add salt to taste.

Medicinal Dish 3: Phoenix Eye Fruit and Egg Sweet Soup

Ingredients: 500g Phoenix eye fruit, 2 eggs, 80g rock sugar

Instructions:

1. Peel the Phoenix eye fruit.

2. Rinse the Phoenix eye fruit, cut in half, and pressure cook for about 40 minutes. Add rock sugar.

3. After the rock sugar melts, pour in the beaten eggs and cook while stirring.

4. It is ready to eat after 1-2 minutes.

Medicinal Dish 4: Braised Pork Ribs with Phoenix Eye Fruit

Ingredients: Phoenix eye fruit, pork ribs, ginger, garlic, dark soy sauce, soy sauce, rock sugar

Instructions:

1. Blanch the Phoenix eye fruit in boiling water, remove the black outer shell and the tough membrane. Marinate the pork ribs with salt, oil, cornstarch, and ginger for a while. Blanch the pork ribs to remove blood.

3. Heat the pan with cold oil, sauté the ginger and garlic, then add the pork ribs and stir-fry. Add the Phoenix eye fruit and continue to stir-fry until the pork ribs are slightly browned. Add enough water to cover the ingredients. The water should not be too little. Braise for a longer time to enhance the flavor.

5. Add some dark soy sauce, soy sauce, and rock sugar for seasoning. Cover the pan and braise over low heat for about 20-25 minutes. Add a little salt and oyster sauce.

6. Finally, turn up the heat to reduce the sauce and add scallions. Serve.
