【Ingredients】

Fresh shrimp, garlic, scallions, ginger, cooking oil, salt, sugar, soy sauce, white wine

【Instructions】

1. After buying the fresh shrimp, soak them in clean water for 30-60 minutes to let them spit out the dirt in their stomachs.

2. Cut off the shrimp whiskers and sharp front pincers, use a toothpick to remove the shrimp line, rinse with running water several times, and drain.

3. Slice the ginger and cut the scallions into sections.

4. Add half a pot of water to the pot, add the ginger slices and scallions, and then pour in a little white wine. Cover the pot and bring the water to a boil over high heat.

5. When the water is boiling, add the shrimp and stir with chopsticks to evenly heat the shrimp.
