Recipes for Treating Ulcerative Colitis in the Elderly

Ulcerative colitis in the elderly is a type of rectal and colonic disease with unknown causes. It is clinically characterized by diarrhea, mucous and bloody stools, and abdominal pain. It often presents as a chronic condition with recurrent episodes and alternating periods of remission. In some cases, the symptoms may persist and gradually worsen. Below are a few recipes for the treatment of ulcerative colitis in the elderly.


Recipe 1: Ginger Beef Rice

Ingredients: 150g beef, 200g glutinous rice, ginger juice, and seasonings as needed.

Method: Wash the beef and chop it into minced meat. Place it in a bowl and mix it with ginger juice, soy sauce, and vegetable oil. Set it aside. Rinse the glutinous rice and place it in a porcelain bowl. Steam it over high heat for about 40 minutes. Remove the cover, pour the ginger beef mixture over the rice, and continue steaming for another 15 minutes.

Effect: Tonifies the middle and benefits qi, strengthens the spleen, and promotes diuresis. Suitable for the elderly with weak spleen and stomach, chronic diarrhea, prolapsed anus, and edema caused by weakness.

Note: Take once a day, preferably for lunch.

Recipe 2: Euryale Seed and Lotus Seed Rice

Ingredients: 500g rice, 50g lotus seeds, 50g euryale seeds.

Method: Wash the rice. Soak the lotus seeds and remove the core and skin. Soak the euryale seeds. Mix all three ingredients together and cook the rice with water.

Effect: Strengthens the spleen, nourishes the kidneys, consolidates essence, and stops diarrhea. Suitable for the elderly with spleen and kidney deficiency, diarrhea, and nocturnal emissions.


Recipe 3: Euryale Seed Dumplings

Ingredients: 400g pork, 60g euryale seeds, 600g flour, 8 onions, 4 small bowls of tender peas, salt, wine, soy sauce, sesame oil, and pepper as needed.

Method: Chop the euryale seeds and soak them in water for 1 hour. Finely chop the pork and onions. Mix the pork, onions, and tender peas in a large bowl. Add the euryale seeds, salt, wine, soy sauce, sesame oil, and pepper to season. Mix well to make the filling. Place the flour in a mixing bowl and add salt. Add hot water while kneading the dough. Knead until the dough is soft and elastic. Transfer the dough to a floured surface and roll it into a long strip. Cut it into small pieces and shape them into dumpling wrappers. Fill the wrappers with the filling and seal the edges. The dumplings can be pan-fried, steamed, or boiled as desired.

Effect: Strengthens the spleen and stops diarrhea. Suitable for the elderly with persistent diarrhea due to spleen deficiency.

Recipe 4: Pheasant Meat Wonton

Ingredients: 1 pheasant, orange peel, and seasonings as needed.

Method: Clean the pheasant and finely chop the meat. Finely chop the orange peel. Mix the pheasant meat and orange peel together. Add Sichuan peppercorn, green onions, salt, and soy sauce to season the filling. Use wonton wrappers to wrap the filling and cook until done.

Effect: Tonifies the spleen, benefits qi, regulates qi, and improves digestion. Suitable for the elderly with spleen and stomach deficiency, abdominal distention, and poor appetite.
