  Fragrant Stewed Beef Brisket with Bean Curd Skin

  [Ingredients]

  500g beef brisket, 250g bean curd skin, 100g black fungus, 25g spring onion, 20g ginger, 15g coriander, 5g beef powder, 30ml cooking wine, 20ml soy sauce, 5g star anise, 3g black pepper powder, 10g starch, 15ml oyster sauce, 8 dried red chili peppers, 5g sugar, 50ml vegetable oil.

  [Cooking Steps]

  (1) Cut the fresh beef brisket into small pieces and mix it with cooking wine, soy sauce, black pepper powder, star anise, and starch;

  (2) Add sliced ginger to the beef brisket and marinate for 10 minutes. Soak the black fungus until soft and cut it into small pieces. Soak the bean curd skin;

  (3) Cut the soaked bean curd skin into about 5cm long pieces, chop the spring onion, and mince the ginger. Heat oil in a pan. When the oil is hot, add the marinated beef brisket and stir-fry over high heat;

  (4) When the beef brisket is about 70% cooked, add the bean curd skin and black fungus to the pan, stir-fry, and season with sugar, soy sauce, oyster sauce, and dried red chili peppers. Add enough water to cover the beef brisket and simmer over low heat for 20 minutes;

  (5) When the sauce thickens, add beef powder and sprinkle with chopped coriander and spring onion before serving.
