【Ingredients】

Pork belly, prickly bamboo shoots.

【Instructions】

1. Wash the pork belly and cut it into pieces. Blanch it in boiling water for a while, then remove and drain.

2. Peel the prickly bamboo shoots and cut them into pieces. Blanch them in boiling salted water, then remove and rinse.

3. Prepare the spring onion, ginger, garlic, star anise, Sichuan peppercorns, cinnamon, and dried chili peppers.

4. Heat the pork belly in a pan over medium heat to render out the fat.

5. In the rendered fat (you can remove some if desired), add rock sugar and cook on low heat until it turns golden brown and starts to bubble.

6. Once the rock sugar has melted and turned golden brown with bubbles, immediately add the pork belly and continue stir-frying until it is browned.

7. Add cooking wine, a little dark soy sauce (adjust according to desired color), and all other seasonings except salt. Stir-fry together with the prickly bamboo shoots.
