【Cooking Method】
1. Wash the pork belly and cut it into cubes. Blanch it in boiling water for a moment, then remove and drain.

3. Prepare green onion, ginger, garlic, star anise, Sichuan peppercorns, cinnamon, and dried chili peppers.
4. Heat a pan over medium-low heat and slowly render the fat from the pork belly.
5. In the rendered fat (you can remove some if desired), add the rock sugar and cook it over low heat until it turns yellow and starts to bubble.
6. Once the rock sugar has melted and produced yellow bubbles, immediately add the pork belly and continue stir-frying over low heat to brown it.
