2. Then add a few drops of vinegar (this helps to extract calcium from the bones) and a few slices of ginger (to remove the fishy smell).

2. After boiling, remove the pig brain and put it in a pre-prepared casserole with water. Add ginger slices, Tianma slices, Sichuan peppercorns, and scallion segments. Then cook over high heat.

3. After boiling, skim off the foam, reduce the heat, and continue cooking for about ten minutes. Add a little salt, monosodium glutamate, and ground pepper.

Tianma Fish Head Soup

10 grams of Tianma, 1 carp fish head, a little chopped coriander, 15 grams of cooking wine, some ground pepper.
