The Hazards of Barbecue: Impact on Health and Well-being

During the summer, when the days are longer and the nights are shorter, many people enjoy going out at night with friends to have a barbecue. This method not only helps to relax, but also allows for the enjoyment of delicious food. However, in reality, barbecue can have a significant impact on our health. Let me list a few major hazards of eating barbecue:


1. Easily causes inflammation

Barbecued food tends to be hot and dry in nature due to the cooking process, and the use of various seasonings such as cumin, pepper, and chili, which are all considered hot and spicy ingredients. This can greatly stimulate the movement of the gastrointestinal tract and the secretion of digestive juices, potentially damaging the mucous membrane of the digestive tract and affecting the body's balance. Eating barbecue can lead to immediate reactions such as mouth ulcers and breakouts on the face, which are symptoms of inflammation.

2. Risk of parasite infection

Barbecued food is often cooked on the outside but undercooked on the inside, and in some cases, it may even be raw. If the raw meat is not fully cooked, it is considered unfit for consumption, such as "rice pork". Eating such meat may lead to parasitic infections, posing a hidden risk of developing cysticercosis.

3. Carcinogenic

During the Maillard reaction, nucleic acids in meat can produce gene mutation substances when heated and decomposed along with most amino acids. These gene mutation substances may lead to the development of cancer. Additionally, in the barbecue environment, there are also carcinogenic substances that can enter the body through the skin, respiratory tract, and digestive tract, increasing the risk of ovarian cancer and breast cancer in women. For example, eating fried and grilled meat every two days increases the risk of these cancers by three times compared to eating once a week, and by five times compared to eating once a month.

4. Impaired vision

Consuming excessive amounts of protein-rich foods that are overcooked or heavily smoked, such as grilled lamb skewers and grilled fish skewers, can seriously affect the vision of young people and lead to myopia.
