Many people have the habit of quickly putting freshly boiled eggs into cold water to stir them, which not only makes them good for peeling, but also keeps them from burning. However, is this burning method scientific? Can freshly boiled eggs be rinsed in cold water?

It can recontaminate the eggs

Clean eggs have a gelatinous film on the surface, but after boiling in hot water, this film is completely destroyed. Without the protection of the film, bacteria can enter the egg through the small pores in the shell.

Affecting the quality of the egg

The large side of the egg has a relatively large air chamber, and when the egg is boiled, the air pressure inside the chamber rises as the temperature around the egg rises, and the air inside the chamber is squeezed out. If the cooked egg is immersed in cold water, the air pressure in the chamber will be negative and the cold water will easily enter the egg through the air holes in the shell, while the bacteria brought in by the cold water will easily grow and multiply inside, seriously affecting the quality of the egg.

Babies should not eat cold-water-excited eggs

Cooked eggs are susceptible to secondary contamination by bacteria in cold water, which is equivalent to indirectly feeding raw water to your baby and can lead to diarrhea.

Cooked eggs washed in cold water are not easy to keep

If the eggs are not eaten at once, the bacteria brought into the eggs by the cold water will multiply rapidly in the eggs, which can lead to deterioration or even decay.

Tips

The correct method is to add a small amount of salt to the eggs during the cooking process. The salt can be used to sterilize and detoxify the eggs, but also to create a gap between the egg shell membrane and the egg white membrane due to the different degrees of contraction, making it easier to peel off the egg shell.
