3. Rinse the pig trotters with clean water to remove any remaining foam. Place them in a container for later use. Prepare the seasonings by washing the green onion and cutting it into sections. Wash the ginger and slice it, then place them in a plate along with Sichuan peppercorns, star anise, bay leaves, and cinnamon. If you like it spicy, you can add two dried chili peppers.

4. Heat a wok and add a small amount of oil. When the oil is 70% hot, add a spoonful of doubanjiang and all the seasonings to the wok. Stir-fry until the doubanjiang releases its red oil and becomes fragrant.

5. Add the pig trotters to the wok, then pour in the beer. The amount of beer should cover the pig trotters. (You can also add half water and a can of beer.)
