1. The sea urchin shells are opened and the roe is collected. You will need about 300g of roe for 2 large eggs.
2. Beat the eggs with an equal amount of water.
3. Place the egg mixture in a steamer and steam until it is about 70% cooked and slightly solidified.
4. Spread the sea urchin roe on top of the eggs and steam on high heat for about 5 minutes, until the roe changes color and becomes firm.
