Perilla Leaf: A Versatile Ingredient for Delicious Stir-Fries and Salads

  Perilla leaf is one of the commonly used Chinese herbal medicines. It is mainly used to regulate lung function and has a good effect on stabilizing the fetus. For people whose fetal qi is not stable, they can regulate their body by consuming some perilla leaves.
 


 

  One: Stir-fried Clam with Perilla Leaves

  【Ingredients】

  1 catty of clams, 1 green pepper, some perilla leaves, some ginger shreds, some minced garlic, some cooking wine, some salt, some cooking oil, some light soy sauce, some dark soy sauce, some chicken powder

  【Instructions】

  (1) Wash the perilla leaves; wash the green pepper and cut into small pieces; soak the clams in salt water for 1 hour to remove sand and impurities;

  (2) After the water boils, add the clams and blanch until the shells open, then remove and drain; rinse the clams to remove the mud;

  (3) Mix salt, cooking wine, light soy sauce, dark soy sauce, and chicken powder into a sauce; heat a small amount of oil in a pan, add ginger shreds and minced garlic, stir-fry until fragrant, then add perilla leaves and stir-fry until soft;

  (4) Add the clams and stir-fry, then add the sauce prepared earlier, cover the pan and simmer for 2 minutes; add the green pepper and stir-fry evenly before serving.

  Two: Cucumber Salad with Perilla Leaves

  【Ingredients】

  500 grams of cucumber, 100 grams of perilla leaves (red or green), salt, monosodium glutamate, sesame oil, white vinegar, sugar

  【Instructions】

  Wash the perilla leaves, blanch them in salted water, and chop them.

  Wash the cucumber, peel it, cut it into shreds, put it in a small basin, sprinkle with salt, monosodium glutamate, white vinegar, and some sugar, mix well, sprinkle the chopped perilla leaves on top of the cucumber shreds, drizzle with sesame oil, mix well before serving, and transfer to a plate.

  Three: Perilla Leaf Stir-fried Pork Ribs

  【Ingredients】

  2 pork ribs, perilla leaves, soy sauce, ginger, garlic, salt, sugar

  【Instructions】

  (1) Marinate the pork ribs with salt, sugar, and soy sauce for 2 hours.

  (2) Pick the perilla leaves and chop them, mince the ginger and garlic.

  (3) Fry the marinated pork ribs over low heat until both sides turn golden brown, then remove from the pan.

  (4) Stir-fry the ginger and garlic in the pan, then add the pork ribs and perilla leaves.

  (5) Add some sugar and soy sauce, cover the pan and cook until the sauce thickens.

  Four: Stir-fried Snails with Perilla Leaves

  【Ingredients】

  500 grams of snails, green and red chili peppers as needed, perilla leaves as needed, soy sauce as needed, oyster sauce as needed, salt as needed, ginger as needed, sugar as needed, fermented black beans as needed, garlic cloves as needed, scallions as needed, cilantro as needed

  【Instructions】

  (1) Clean the snails. If there are already pre-cleaned snails available in the market, it is more convenient to buy them. It is best to pick out any dead or bad snails to avoid any unpleasant surprises when eating. Pound a piece of ginger, about half the size of a thumb. Prepare all the other ingredients.

  (2) Heat up some oil in a pan and add garlic cloves, ginger, chili peppers, chopped perilla leaves, and fermented black beans to stir-fry until fragrant. Add some white sugar for flavor.

  (3) Stir-fry for a while until the snails start to dry out, then add soy sauce, oyster sauce, and a suitable amount of salt and water to cook.

  (4) Once most of the snails have dropped the small piece near the opening, sprinkle with cilantro and chopped scallions, cover the pan for a while, and then serve.

  And there you have it, a delicious and spicy stir-fried snails dish!
