Tianma Fish: A Medicinal Delicacy for Nourishing the Liver and Kidneys

Tianma is a precious medicinal herb that nourishes the liver and kidneys and has the effects of calming the liver, extinguishing wind, calming the mind, and promoting blood circulation. It is commonly used for symptoms such as headache due to liver fire, dark vision and numbness in the limbs, neurasthenia, hypertension, and dizziness. Tianma fish, with a long history, can be used as a medicinal food to treat and prevent diseases.


Ingredients:

Main ingredient: 1 fresh carp (about 1000 grams).

Auxiliary ingredients: 25 grams of Tianma, 10 grams each of Chuanxiong and Poria cocos.

Seasoning:

5 grams each of salt, sesame oil, cooking wine, white sugar, and sesame oil, 10 grams each of green onion and ginger, 2 grams of MSG, 1 gram of pepper, 20 grams of wet starch, and 100 ml of meat broth.


Preparation:

(1) Slaughter the fresh carp, remove the gills, scales, and internal organs, clean it, and marinate with salt (3 grams). Cut Chuanxiong and Poria cocos into large pieces and soak in the second rinse water of rice for 2 hours. Then put Tianma in the water soaked with Chuanxiong and Poria cocos, soak for 4-6 hours, remove Tianma, steam it in a steamer for 1 hour, and then cut into slices.

(2) Boil the fish in boiling water for a while, remove it, and put Tianma, Chuanxiong, and Poria cocos into the fish belly. Put the fish on a large plate, garnish with shredded green onion and ginger, add 50 ml of meat broth, and steam for 14 minutes.

(3) Remove the steamed fish, remove the shredded green onion and ginger, add 50 ml of meat broth to the wok, add salt (2 grams), cooking wine, sesame oil, MSG, pepper, and the juice from the fish, thicken with wet starch, drizzle with sesame oil, and pour the sauce over the fish.
