【Duck Heart with Honeysuckle and Sea Cucumber】- Brain-Boosting

  

  Ingredients

  

  6g honeysuckle flowers, 10g honeysuckle bark, 250g duck heart, 500g soaked sea cucumber, 12 stalks of rapeseed, vegetable oil, soy sauce, monosodium glutamate, cooking wine, water starch, sugar as needed. A little sesame oil.

  

  Instructions

  

  1. Boil the honeysuckle flowers and honeysuckle bark twice to extract the juice. Combine and strain. Peel the old leaves off the rapeseed and cut off the roots. Cut the root section into 6cm long pieces and wash them. Stir-fry in a hot wok for 25 seconds. Add cooking wine and honeysuckle juice. Move the wok to medium heat and cook for about 10 minutes until the vegetables are tender. Add monosodium glutamate and stir for a moment.

  
        

 

  2. Blanch the sea cucumber in boiling water for a moment and remove. Heat oil in a wok, stir-fry the chopped scallions, add cooking wine and soy sauce, pour in the honeysuckle juice, add sea cucumber, monosodium glutamate, sugar, ginger juice, and salt to taste. Thicken the sauce, drizzle with sesame oil, and remove from the wok.

  

  3. Remove the heart and head of the duck heart, wash and pat dry. Make shallow cuts in the shape of chrysanthemum petals, marinate with cooking wine, salt, and cornstarch.

  

  4. Heat peanut oil in a hot wok until 70% hot. Add the marinated duck heart and stir until cooked. Remove.

  

  5. Heat a little oil in another wok. Add the cooked duck heart and pour in the thickened sauce. Stir-fry evenly, pour sesame oil in the center of the plate, and place the sea cucumber around it. Arrange the 12 cooked rapeseed stalks radially on top of the sea cucumber.
