Pork Bone Soup with Baby Bok Choy

Ingredients:

Pork bones, baby bok choy, ginger

Instructions:

1. Cut the pork bones in half and wash them along with the spine bones. Place them in a pot of cold water.

2. Once the water is boiling, remove any impurities and cook for two minutes. Remove the bones and rinse them with warm water to remove any remaining blood.

3. Heat a wok with a small amount of oil and stir-fry the scallions, ginger, and star anise until fragrant. Add enough water and the bones.

4. Bring to a boil over high heat, then reduce to low heat and simmer slowly.

5. Wash and prepare the baby bok choy. When the bones are tender and easily come off with a poke of a chopstick, add the baby bok choy and increase the heat to high.

6. Cook the bok choy until tender, then sprinkle with some pepper and serve.
