Many people love tomatoes and often eat them raw, treating them like fruits. Tomato Fish Ball Soup with Enoki Mushrooms is a simple home-cooked dish made with grass carp, egg whites, enoki mushrooms, tomatoes, ginger, and scallions!
【Ingredients】
Three pounds of grass carp, 3 egg whites, enoki mushrooms, tomatoes, ginger, and scallions.
150 grams of lard, salt, chicken powder, white pepper powder, cooking wine, and water, as needed.
【Instructions】
1. Clean and gut the grass carp, and separate the fish meat and fish head (the fish scales and bones are not used in this dish, but can be used for smoked fish after marinating). Cut the fish meat into small pieces and set aside.
2. Separate the egg whites and egg yolks.
3. Use only the white part of the scallions and cut the ginger into small pieces.
4. Put the fish meat, egg whites, ginger, and white part of the scallions into a food processor.
5. Cover the lid and turn it upside down to blend. If the fish meat on top is not blended well, you can take it out and shake it a few times before blending again to ensure that every piece of fish meat is crushed.
6. Blend until you get a uniform fish paste. If there is a large amount of fish meat, it is better to blend in three to four batches.
7. Pour the blended fish paste into a large bowl and set aside.
8. Add cornstarch, lard, salt, chicken powder, white pepper powder, water, and cooking wine.
【Precautions】
1. Not suitable on an empty stomach
Tomatoes contain soluble astringents, and the stomach in an empty state is more sensitive. Eating tomatoes on an empty stomach may cause discomfort.
2. Avoid eating unripe tomatoes
Many vendors use ripening agents to ripen tomatoes before selling them. This not only makes it difficult for the body to absorb nutrients, but it may also be harmful. Pay attention when choosing tomatoes.
3. Tomatoes should not be eaten with cucumbers
Cucumbers contain enzymes that break down vitamin C. Eating tomatoes and cucumbers together can destroy the vitamin C in tomatoes, preventing the nutritional benefits from being fully absorbed.
