Six Recipes Using Chenpi: Harnessing the Medicinal and Edible Value of Orange Peel

Oranges are a popular fruit, and their peel has high medicinal and edible value, known as Chenpi in traditional Chinese medicine. Chinese medicine believes that Chenpi has the effects of regulating qi, invigorating the spleen, drying dampness, warming the stomach, and transforming phlegm. Below, I will introduce six recipes using Chenpi.
 


 

  1: Chenpi Boiled Chicken

【Ingredients】

1 tender chicken (about 1500g), 15g Chenpi, appropriate seasoning. Method: Remove the hair and impurities from the chicken, wash it, put it in a pot, add minced Chenpi, ginger, green onion, pepper, salt, etc., and cook until the chicken is 60% cooked. Remove and let it cool; then put the chicken and the marinade back into the pot, cook over low heat until the chicken is fully cooked, and take it out; add monosodium glutamate, sugar, salt, etc. to the marinade, and use high heat to thicken the sauce. Brush the sauce onto the chicken skin, and pour out the remaining sauce. Heat vegetable oil in the pot until it is 90% hot, fry the remaining Chenpi until crispy, then pour the hot oil with fried Chenpi over the chicken repeatedly until the chicken skin turns red and shiny, then remove it and brush it with sesame oil, and cut it into pieces.

【Effects】

Drying dampness, invigorating the spleen, and warming the stomach. Suitable for conditions such as distension in the chest and abdomen, loss of appetite, nausea and vomiting, etc.

  2: Chenpi Porridge

【Ingredients】

10g Chenpi, 50g rice. Method: Wash the Chenpi, cut it into small pieces, decoct it with water, and remove the residue; wash the rice, put it in a pot, add Chenpi juice and an appropriate amount of water, cook it into a thin porridge, and take it once a day; or grind the Chenpi into powder, take 3-5g each time, and mix it with the porridge.

【Effects】

Regulates qi, invigorates the spleen, and transforms phlegm. Suitable for conditions such as stagnation of qi in the spleen and stomach, distension in the epigastrium, loss of appetite, indigestion, nausea and vomiting, cough with excessive phlegm, and fullness in the chest and diaphragm.

  3: Chenpi Crucian Carp

【Ingredients】

250g crucian carp, 10g Chenpi, appropriate seasonings. Method: Soak the Chenpi, wash it, and shred it; slice the ginger; grind the pepper; cut the green onion into sections; remove the scales and impurities from the crucian carp, wash it; put the Chenpi, ginger, pepper, green onion segments, etc. into the fish belly, and then put the crucian carp in a bowl, place ginger slices on top, add Huangjiu, vinegar, salt, monosodium glutamate, and an appropriate amount of water, stew it over water until cooked, and then serve.

【Effects】

Invigorates the spleen, warms the stomach. Suitable for conditions such as weak and cold stomach, chronic diarrhea, chronic dysentery, abdominal pain, etc.
 


 

  4: Chenpi Duck

【Ingredients】

1 green duck, 10g Chenpi, appropriate seasonings. Method: Remove the impurities from the duck, wash it, stew it until it is slightly tender, remove it, let it cool, remove the duck bones, place the breast side up in a porcelain basin; add an appropriate amount of powdered milk to the original soup of the stewed duck, boil it with chicken broth, add cooking wine, soy sauce, pepper powder, ginger powder, etc., and then pour it into the porcelain basin, place the shredded Chenpi on top of the deboned duck, steam it for 30 minutes.

【Effects】

Invigorates the spleen, stimulates appetite. Suitable for conditions such as weak spleen and stomach, loss of appetite, malnutrition, and physical weakness and emaciation.

  5: Chenpi Lean Pork Soup

【Ingredients】

10g Chenpi, 50g lean pork, 3 slices of ginger, appropriate seasonings. Method: Wash the Chenpi, cut it into fine pieces; cut the onion into segments; wash the lean pork, cut it into shreds, thicken it with starch, soy sauce, and cooking wine; heat vegetable oil in a pot, add the onion and ginger, stir-fry until fragrant, then add the shredded pork, stir-fry, then add the shredded Chenpi, stir-fry until cooked, add salt and monosodium glutamate, stir-fry until done.

【Effects】

Invigorates the spleen, stimulates appetite, reduces acidity and relieves pain. Suitable for conditions such as stagnation of qi in the stomach, excessive stomach acid causing epigastric pain, warming the qi, vomiting clear water, etc.

  6: Chicken and Orange Peel Powder Porridge

【Ingredients】

3g dried orange peel, 5g chicken internal gold, 2g cardamom, 30g rice, a little white sugar. Method: Grind all the herbs into fine powder; wash the rice, add an appropriate amount of water to cook the porridge, when it is cooked, add the powdered herbs and sugar, cook until the porridge is done, take it twice a day, one bowl each in the afternoon and evening.

【Effects】

Invigorates the spleen, dissolves accumulations. Suitable for conditions such as bloating, yellow complexion and emaciation, vomiting, sticky and sluggish stool caused by irregular eating habits in children.
