  Ingredients:

  

  Main Ingredients:

  

  4 ounces jellyfish skin (about 160g), 6 ounces chicken (about 240g), 2 cloves of garlic, a little bit of cilantro, 1 tablespoon of oil

  

  Seasonings:

  

  Marinade: 1/4 teaspoon salt, 1/4 teaspoon sugar, 1/2 teaspoon cornstarch, 1/2 tablespoon egg white, a little bit of sesame oil and pepper, 2 tablespoons water

  

  Sauce: 1/4 teaspoon salt, 1/4 teaspoon sugar, 1/2 teaspoon cornstarch, 1 teaspoon sesame paste, 1 tablespoon Zhejiang vinegar, 2 tablespoons water

  
            

 

  Instructions:

  

  (1) Soak the jellyfish skin in water for 2 days (change the water 2 to 3 times each day), cut into strips, blanch in hot water, remove and drain.

  

  (2) Cut the chicken into strips, mix with the marinade, marinate for 20 minutes, and then soak in hot oil to tenderize.

  

  (3) Peel and crush the garlic cloves; wash and drain the cilantro.

  

  (4) Heat 1 tablespoon of oil, sauté the garlic and chicken, stir in the sauce ingredients, quickly stir-fry, add cilantro and jellyfish, mix well and serve.
