Recipe for stir-fried mushrooms

Ingredients:

White mushrooms, ginger, garlic, small red chili peppers, light soy sauce, dark soy sauce, salt, sugar

Preparation method:

1. Prepare the necessary ingredients. It is recommended to choose mushrooms with soil still on them, as they are fresher.

If the mushrooms are very white, have many stems removed, or have been soaked in medicinal water, they are not very fresh-looking.

2. Cut the mushrooms in half, chop the ginger, slice the garlic, mince the chili pepper (optional if you don't like spicy), and cut the green onion into small pieces.

3. Heat the wok and add oil. When the oil is hot, add ginger, garlic, and chili pepper and stir-fry until fragrant.

4. Add the mushrooms and stir-fry for a few minutes until they start to soften.

5. Add light soy sauce and stir-fry, then add dark soy sauce to give them color.

6. Pour in half a bowl of warm water and simmer over medium-low heat. Pay attention to the amount of water in the pot and avoid burning it dry.

7. While the mushrooms are cooking, prepare a starch slurry: in an empty bowl, mix half a bowl of water, a suitable amount of salt, a little sugar, and half a tablespoon of cornstarch.

8. When there is not much sauce left in the pot, pour in the prepared starch slurry and thicken the sauce.

9. Finally, serve on a plate, sprinkle with green onions, and enjoy with a bowl of rice!
