Delicious Pig Kidney Recipes for a Nutritious Meal

Pig kidneys are rich in nutrition and have the effects of nourishing the kidneys, strengthening the yang, and benefiting the qi. However, they must be cleaned thoroughly before cooking! Pig kidneys can be made into delicious dishes in daily life, and many people love to eat them.


One: Stir-fried Kidney

Ingredients:

Main ingredients: pig kidneys (2), cooking wine (2 tablespoons), salt (2 teaspoons), ground pepper (1 gram), garlic (as needed), green and red bell peppers (as needed)

Seasoning: white wine (2 tablespoons), chicken stock (2 teaspoons), white vinegar (1 teaspoon), ginger (as needed), green onion (as needed)

Instructions:

1. Cut the pig kidneys into strips with scissors.

2. Cut the green and red bell peppers into thin strips.

3. Marinate the pig kidneys with white wine, cooking wine, salt, and white pepper for half an hour.

4. Boil water in a pot, add salt, and blanch the marinated pig kidneys quickly (the blanching process should be fast, just a quick dip in the water).

5. Heat oil in a pan, add ginger, garlic, and green onion, fry until fragrant, then remove the oil.

Two: Stir-fried Kidney with Onion

Ingredients:

Main ingredients: pig kidneys (a pair), onion (1), green bell pepper (1), shiitake mushrooms (2)

Seasoning: ginger and green onion (as needed), starch (as needed)

Instructions:

1. Cut the pig kidneys in half horizontally.

2. Remove the core from the kidneys, but keep it for later use. Repeat for all kidneys.

3. Score the front side of the kidneys with vertical cuts, being careful not to cut all the way through.

4. Then cut into small pieces.

5. Marinate the cut kidneys with cooking wine, sugar, starch, and light soy sauce, mix well and set aside.

6. Wash and slice the onion, green bell pepper, and shiitake mushrooms.

7. Heat oil in a wok, stir-fry ginger and green onion, then add the kidneys and stir-fry.

8. Stir-fry until the kidneys change color and become firm, then transfer to a plate.

9. Heat a small amount of oil in the wok, stir-fry the onion and shiitake mushrooms until soft.

10. Add sugar, oyster sauce, dark soy sauce, and continue stir-frying until the onion is soft.

11. Add the green bell pepper and the stir-fried kidneys, add a little salt and chicken powder, stir-fry evenly, and turn off the heat.

Three: Stir-fried Kidney with Celery

Ingredients:

Main ingredients: celery (250 grams), pig kidneys (2), soaked black fungus (as needed)

Seasoning: green onion (as needed), ginger (as needed)

Instructions:

1. Clean the pig kidneys, cut them in half, and remove the core.

2. Then cut a series of horizontal and vertical lines on the front side of the kidneys, being careful not to cut all the way through.

3. Rinse the kidneys and marinate them with white wine, starch, salt, sugar, and light soy sauce for 10 minutes.

4. Rinse the kidneys again to remove excess marinade.

5. Heat oil in a wok, stir-fry ginger and green onion. Add the kidneys and stir-fry until evenly cooked.

6. Blanch the celery in boiling water with a little salt, then cool it down.

7. Heat oil in the wok, stir-fry ginger and green onion. Add the celery and black fungus and stir-fry.

8. Add sugar and salt, then add the stir-fried kidneys. Add a little chicken powder and drizzle with sesame oil. Stir-fry until well mixed and turn off the heat.

Four: Kidney Soup

Ingredients:

Main ingredients: pig kidneys (as needed)

Seasoning: ginger (as needed), green onion (as needed)

Instructions:

1. Clean the pig kidneys and soak them in water for about an hour, changing the water in between.

2. Place a piece of pig kidney on a cutting board and make parallel cuts without cutting through.

3. Make perpendicular cuts at a 90-degree angle to the previous cuts, also without cutting through.

4. Cut the kidney into pieces after making cross cuts.

5. Heat oil in a pot, sauté ginger, add water and bring to a boil. Add green onion, salt, and cooking wine.

6. When the water in the pot is boiling, add the kidney.

7. Skim off the foam when the water boils again, then simmer for a while on low heat.

8. Add a little monosodium glutamate and adjust the seasoning, then it is ready to serve.

Five: Boiled Kidney

Ingredients:

Main ingredients: pig kidneys (as needed), lettuce (as needed)

Seasoning: onion, ginger, garlic, Sichuan peppercorns, dried chili peppers (as needed)

Instructions:

1. Cut the kidneys and marinate them with cooking wine, cornstarch, salt, ground pepper, and chicken powder.

2. Cut the onion into small pieces, mince the garlic (forgot to take a picture), cut the dried chili peppers into small pieces, and wash and drain the Sichuan peppercorns.

3. Heat oil in a wok, sauté some of the chopped onion, ginger, garlic, chili peppers, and Sichuan peppercorns. Add two tablespoons of doubanjiang and stir-fry until fragrant.

4. Add an appropriate amount of water (using chicken stock is even better) and bring to a boil. Add some chicken powder and taste the soup to adjust the saltiness. Add more salt if necessary.

5. Add the lettuce leaves that have been soaked in salt water beforehand. Flip the lettuce with chopsticks a few times, and it's ready to be removed from the pot and placed in a bowl.

6. Rinse the marinated kidneys under water and add them to the boiling pot.

7. When the water boils again, pour the kidneys, along with the soup, into the bowl with the lettuce.

8. Heat up some oil in a pan, sauté the remaining chopped onion, ginger, garlic, chili peppers, and Sichuan peppercorns. When the oil starts to smoke, turn off the heat and pour the hot oil into the bowl with the kidney soup. Sprinkle some chopped cilantro on top, and it's ready to be served.
