【Ingredients】

9g pepper, 60g lotus seeds, 9g Buddha's hand, 1 pig stomach.

【Instructions】

1. Put the pig stomach in a basin, rinse with running water. Turn it over to the side with mucus, sprinkle some cornstarch and rub it for about 3-4 minutes. Then wash it clean. Repeat the process. You can also add salt and vinegar to wash it again. Rinse until the mucus is washed off.

2. Boil a pot of hot water, put the pig stomach in and blanch for two minutes. Before removing it, you can put a plate inside the pig stomach to prevent it from shrinking. Take it out, scrape off the surface fat and calluses with a knife, and wash it clean. There should be no peculiar smell.

3. Rinse the lotus seeds, no need to soak them in advance. It is best to buy lotus seeds without cores, otherwise the soup will taste bitter. If there are cores, poke them with a toothpick.

4. Put the whole pig stomach into a stewing pot, add two slices of ginger, and pour in more than half of the pot of water. Putting the pig stomach in whole can prevent it from shrinking. Do not roll it up.

5. Press the stewing button and stew for about 2 hours. When the water boils, add 2 tablespoons of cooking wine to remove the fishy smell and enhance the freshness. When there is half an hour left, add the lotus seeds so that they won't be overcooked.

6. After stewing, cut the pig stomach into strips with kitchen scissors. Add salt and chicken powder.
