Discovering the Healing Power of Chinese Medicated Diets in Yunnan: Three Traditional Recipes

Medicated diet is widely used for health preservation. Some diseases or stages of diseases can be treated with medicated diet or food as the main treatment. With its vast land and rich resources, China has many precious Chinese herbs, and its food culture is also colorful. Therefore, it has developed the auxiliary therapy of medicated diet for diseases, among which ethnic medicated diet is particularly famous. Below, I will teach you how to make three Yunnan medicated diets.


Medicated Diet 1: Boiled Snake Balls

China has a tradition of eating snakes, which is particularly popular in the southern part of the country. According to "Shan Hai Jing", it is said that "gentlemen who eat it will not have gastrointestinal diseases." In addition to its delicious taste, eating snake can also nourish and strengthen the body, dispel wind and activate collaterals, and has good effects on rheumatism, arthritis, and other conditions.

Ant nest snakes belong to the snake family of frogs and snakes, and they mostly grow in half-slopes facing the sun where there are ants. They enter ant nests to eat ants in winter and come out of the nests in late winter and early spring. They are easy to catch and have the characteristics of short and strong tails, fresh and tender meat, and they are venomous snakes. This dish uses chicken broth to cook snake balls, which taste fragrant and sweet, with a yellowish-white color and an elegant presentation. It has the effects of dispelling wind and dampness, and nourishing and therapeutic effects. Ingredients

[Main Ingredients]

1 ant nest snake (about 1000g).

[Seasonings]

10g salt, 3 eggs, 5g pepper, 3g MSG, 3g grass fruit powder, 20g chopped spring onions, 20g ginger slices, 500ml chicken clear broth, 1000g lard (100g consumed).

[Preparation]

(1) Slaughter the snake, remove the head, tail, skin, and internal organs, and pound the meat. Beat the eggs in a bowl, add snake paste, salt (4g), pepper, and MSG (1g), and mix well.

(2) Heat the lard in a pot until it is 80% hot, add chopped spring onions and ginger to remove the raw oil smell, shape the snake paste into balls, and fry until golden yellow. Heat the chicken clear broth in the pot until boiling, add the balls and cook until done, then add salt (6g) and MSG (2g), and serve in bowls.


Medicated Diet 2: Braised Deer Penis

Deer penis is the reproductive organ of male deer and is a precious mountain delicacy. It contains nutritional substances such as protein colloids and hormones. It has the effects of nourishing the kidney, strengthening the yang, and benefiting essence. It has certain therapeutic effects on fatigue, knee pain, tinnitus and deafness caused by kidney deficiency, yang phlegm, chronic orchitis, female cold-induced infertility, and other conditions.

Braised deer penis is known for its smooth texture, fragrant aroma, white color, and thick and non-greasy taste, which is famous for its nourishing and health-preserving effects.

[Ingredients]

Main ingredients: 500g soaked deer penis.

Accessories: 50g cooked Yunhui ham, 30g cooked chicken breast meat, 20g soaked winter mushrooms, 20g egg yolk cake.

[Seasonings]

40g chopped spring onions, 40g ginger slices, 20g yellow wine, 20g lard, 20g sesame oil, 20g salt, 10g pepper, 10g MSG, 800ml chicken clear broth.

[Preparation]

(1) Cut the deer penis in half lengthwise, remove the tendons in the urethra, wash it with clean water, cut the two halves into 4 pieces lengthwise, and cut them into 5cm long segments. Put them in boiling water to remove excess blood, and then rinse them clean. Take them out and put them in a bowl, add chicken clear broth, bone marrow, chicken leg bones, chopped spring onions, ginger, and yellow wine, and steam them in a steamer.

(2) Cut the Yunhui ham, chicken meat, winter mushrooms, and egg yolk cake into slices of the same size.

(3) Heat the lard in a frying pan over medium heat, add the Yunhui ham slices, stir-fry until fragrant, then add the winter mushroom slices and stir-fry briefly, then add the chicken slices and egg yolk cake slices, stir-fry, and then transfer to a soup plate. Take out the deer penis, remove the spring onions, ginger, bone marrow, and chicken bones, pour the soup into the frying pan, and flip the deer penis onto the soup plate. Add salt, MSG, and pepper to the pot, adjust the taste, pour the soup over the deer penis on the plate, steam for another 10 minutes, remove, and drizzle with sesame oil before serving.


Medicated Diet 3: Deep-Fried Spider

Deep-fried spider is a specialty dish of the Yi people in Yunnan. The spider, scientifically known as the orb-weaving spider, mostly grows in the mountains and often weaves webs in forests. It is larger than ordinary spiders and is covered with white spots, hence the name. It is caught in summer and autumn and has the effects of detoxification. It can treat lymph node tuberculosis, wounds, bee and scorpion stings, and snake bites. When fried and eaten, it has a fragrant smell and is more delicious than fried silkworm pupa.

[Ingredients]

Main ingredient: 400g spider.

Seasoning: 2g salt and pepper, 150g rapeseed oil.

[Preparation]

(1) Find the spider and use a wooden stick with rings to wrap the spider and bring it back. Scald it in boiling water, remove the head, feet, and drain the water. Dry it and store it.

(2) When eating, soak the dry spider in hot water for a while to soften it, then wash it. Heat the rapeseed oil in a frying pan, add the spider when the oil is hot, and slowly fry it over low heat until it turns orange. Remove it and place it on a plate, sprinkle with salt and pepper, and serve.
