Nourishing and Delicious: Two Recipes Using Zhanggong Fish

Zhanggong fish is known as a great tonic in many areas. Its flesh is very delicious and it has great therapeutic effects when used to make soup. It is very beneficial for the human body!


Recipe 1: Tofu Zhanggong Fish Soup

Ingredients: 1 Zhanggong fish, ginger, tofu, oil, salt.

Method:

1. Clean the Zhanggong fish, remove scales, gills, and internal organs. Slice the ginger and cut the tofu into small pieces.

2. Heat some oil in a pan and sauté the ginger slices. Pan-fry the Zhanggong fish over low heat until slightly golden.

3. Add 1000 ml of water to the pan and put all the ingredients in the pan. Cook over high heat for 5 minutes, then simmer over low heat for 15 minutes.

4. Season with oil and salt before serving.

Recipe 2: Seven-Star Fish Ball Soup

Ingredients: Zhanggong fish, shrimp, fatty pork, celery, pepper, sesame oil.

Method:

1. Clean the Zhanggong fish and scrape off the fish scales with a small knife. Put the fish meat in a bowl and add 500 ml of water and 4 grams of salt. Add the water in 5 portions, kneading the fish meat until it forms small balls that float in the water.

2. Wash the shrimp and mince the fatty pork. In a separate bowl, mix the shrimp paste and pork mince with salt and MSG. Shape the mixture into small meatballs.

3. Heat a pot with water over medium heat. Take a handful of fish meat in your left hand and place a meatball in the center with your right hand. Use your thumb and index finger to wrap the fish meat around the meatball, pressing it out through the fingers to form a fish ball.

4. Cook the fish balls in the pot until they are cooked through. Transfer them to a soup bowl. In another pot, bring water to a boil and add MSG, salt, skim off the foam, and pour the soup over the fish balls. Garnish with a little celery, pepper, and sesame oil.
