There are many ways to make shredded chicken, and today I will teach you a modified version. By adding homemade sesame sauce, the chicken becomes tender and flavorful. It can be served cold or hot, and both ways are delicious.

Shredded Chicken with Spicy Sesame Sauce

【Ingredients】

Main ingredients: half a yellow chicken

Side ingredients: 1/3 teaspoon of Sichuan peppercorns, 1 cup of chicken stock, 10 chili peppers, 1/2 tablespoon of sesame seeds, 3 cilantro stalks, 4 scallions, 1 piece of ginger, 1 head of garlic, 1 tablespoon of salt, 1 teaspoon of Sichuan peppercorn powder, 1 cup of yellow wine, 1/2 tablespoon of sesame oil, 1 teaspoon of chicken bouillon

【Steps】

1. Prepare all the ingredients.

2. Blanch the yellow chicken in boiling water to remove the hair and dirt. Use a toothpick or fork to poke small holes evenly.

3. Mix ginger powder, Sichuan peppercorn powder, and a tablespoon of salt. Rub the mixture evenly on the chicken and massage it. Wrap the chicken with plastic wrap and marinate for half an hour to two hours.

4. Bring a pot of water to a boil that can submerge the chicken. Add a piece of ginger and a cup of yellow wine to the water. Immerse the chicken in the water and simmer on low heat for 15-20 minutes. Transfer the chicken to ice water and tear it apart with your hands.

5. Prepare the following: chicken stock, Sichuan peppercorns, sliced chili peppers, sesame seeds, chopped cilantro and scallions, and ginger slices.

6. Heat a mixture of sesame oil and cooking oil in a pan. If possible, use all sesame oil. Stir-fry the ginger slices until fragrant and turn off the heat.

7. Let the oil cool slightly, then add sesame seeds, Sichuan peppercorns, and chili peppers. Simmer on low heat for a while. Add the chicken stock and bring to a boil. Simmer on low heat.

8. Shred the chicken and set aside.

9. Season the spicy sesame sauce with salt and chicken bouillon. Add the shredded chicken to the sauce and bring to a boil. Let it soak for half an hour. You can simmer on low heat for better flavor. Serve with chopped cilantro and scallions.
