Leek Dumplings

【Ingredients】

Dumpling filling: pork leg meat, celery, scallion, ginger, dried shrimp, shrimp oil, salt, light soy sauce, oyster sauce, Sichuan peppercorn powder, eggs.

Dumpling skin: flour, boiling water, cold water.

【Instructions】

1. Remove the skin from the pork leg meat and chop it into small pieces. Mix it with ginger, minced dried shrimp, salt, light soy sauce, oyster sauce, Sichuan peppercorn powder, and beaten eggs. Gradually add a suitable amount of broth or water, stirring until the meat filling is soft and elastic.

2. Wash and dry the scallions, then chop them into small pieces and mix them with shrimp oil before adding them to the meat filling.

3. Wash and chop the celery, squeeze out any excess water, mix it with shrimp oil, and then add it to the meat filling.

4. Add boiling water to the flour while stirring, then add cold water and continue stirring until the dough becomes smooth. Cover it with a cloth and let it rest for 20 minutes.

5. Divide the dough into two portions and roll one portion into a long strip. Divide it into four equal pieces and roll out one piece into a dumpling skin, with the middle thicker than the edges.

6. Repeat the process for all the dough and fill each dumpling skin with the meat filling. Heat a flat-bottomed pan, add a little oil, and then place the dumplings in the pan. Fry them until both sides are slightly golden, then add a suitable amount of water, cover the pan, and simmer until the water evaporates. Open the lid and fry the dumplings until both sides are golden and crispy.

2. The celery can also be blanched in boiling water and squeezed dry before adding it to the meat filling.

3. The dumplings made with semi-cooked dough will be softer and more elastic.
