  [Quail Stewed with Corn]

  

  3 quails, 150g corn kernels, 50g pine nuts, 50g lard, 1 egg white, cooking wine, salt, monosodium glutamate, sesame oil, pepper, chicken broth, starch, lard, refined vegetable oil, as needed.

  

  ①First, slaughter the quails, remove the feathers and internal organs, and wash them. Cut the quail and pork into corn kernel-sized pieces and put them in a bowl. Add egg white, monosodium glutamate, cooking wine, and starch. Mix well.

  

  ②Boil the pine nuts in boiling water, remove and drain. Heat the pan with oil until it is 50% hot, then fry the pine nuts until golden brown.

  

  ③Pour out the corn kernels and drain them. Add chicken broth, monosodium glutamate, salt, sesame oil, pepper, and wet starch to make a sauce. Heat the wok, add oil, heat it to 40% hot, add quail and pork pieces, stir fry for 2 minutes, then remove and drain the oil.

  

  ④Pour the corn kernels into the original pan, then add the quail and pork pieces. Pour in cooking wine and the prepared sauce, bring to a boil, then add lard and mix well. Sprinkle with pine nuts and serve.

  
        

 

  [Stewed Wood Ear with Shrimp]

  

  200g dried black fungus, 100g shrimp, 200g vegetable broth, 50g minced chicken, 30g sesame, 25g cooking wine, 50g fresh tomatoes, 15g ginger juice, 50g spinach leaves, 1000g refined vegetable oil (approximately 100g consumed), green onion, dry starch, salt, monosodium glutamate as needed.

  

  ①Coat the shrimp with starch and then fry them. Blanch the dried black fungus, rinse and remove excess water, chop into small pieces, put in a bowl, add salt, monosodium glutamate, sesame, minced chicken, dry starch, and vegetable broth. Mix well, knead in your hand and form 10g meatballs with each one containing a shrimp. Cut the fresh tomatoes into pieces.

  

  ②Heat the pan, add oil and heat it to 70% hot, fry the meatballs briefly and then remove them and drain the oil with a colander.

  

  ③Heat the pan, add oil and heat it, stir-fry the green onions and tomato pieces for a few seconds, then add cooking wine and ginger juice. Add vegetable broth, salt, and monosodium glutamate, bring the meatballs to a boil, simmer until well flavored, then add spinach leaves. Thicken with wet starch, mix well, and serve in a dish.

  

  [Country Vegetable Rib Soup]

  

  1 pork rib, 1 carrot, 1 corn, a little celery, 10 mushrooms, salt, chicken essence, ginger slices, cooking wine.

  

  ①Chop the pork ribs into small pieces, wash them, and blanch them in boiling water. Remove and wash them.

  

  Put the pork ribs in a pot, add enough cold water, add ginger slices, heat on high heat, skim off any foam, add cooking wine, cover and simmer on low heat for one hour.

  

  ②After an hour, add peeled and diced carrots and continue to simmer on low heat for half an hour.

  

  Half an hour later, add diced corn and continue to simmer for half an hour. After half an hour of cooking the corn, add washed mushrooms and celery, add salt, and continue to simmer for ten minutes. Adjust the taste with chicken essence and serve.

  
        

 

  [He Shou Wu and Pigeon Egg Soup]

  

  5g He Shou Wu, 3g prepared Rehmannia Root, 50g pigeon eggs, 10g straw mushrooms, salt as needed.

  

  ①Boil the pigeon eggs in cold water, and then peel them after they are cooked.

  

  Remove the core of the straw mushrooms, boil He Shou Wu and prepared Rehmannia Root for about 30 minutes, and reserve the liquid.

  

  ②Stew He Shou Wu and Rehmannia Root liquid with pigeon eggs and straw mushrooms for about 30 minutes. Add salt when cooked.

  

  [Clam Chowder]

  

  500g clams, 500ml seafood or chicken broth, 500ml milk, 15ml light cream, 25g bacon, 1/2 onion, 1 potato, 50g mushrooms, 2 tbsp oil noodles, 10g butter, salt and white pepper as needed.
