2. Loach and Tofu Casserole

Cut the tofu into 4 small pieces; remove the ribs and internal organs of the loaches and wash them clean. Slightly fry the loaches, put them in a clay pot; then add the tofu and ginger slices to the pot, add an appropriate amount of water, and simmer over low heat for 20 minutes. Then add spring onion and salt, and cook a little longer. The tofu should be added last to keep it tender. It can be stewed with wolfberry to achieve a good nourishing effect. Generally, to clean the loaches, put a suitable amount of live loaches in clean water, add a few drops of vegetable oil, remove the dirty water every day, and change it to clean water. Wait until the loaches expel the mud and wash them clean for later use.


         

 

3. Loach Fish Soup

Put live loaches in a bowl and cover them with salted pumpkin leaves. After 3 minutes, remove the loaches from the leaves. In a pot, sauté the loaches with sesame oil, then pour in the meat broth and simmer. Pour the broth through a sieve and use a wooden spoon handle to rub the meat so that it falls to the bottom, leaving the bones and skin on top. Add soy sauce, chili sauce or soybean paste to the broth, and add pepper and ginger. Add mung bean sprouts, dip vegetables, and spring onion, and simmer with beef seasoned with additional ingredients.
